Stifado (Greek Beef and Shallot Stew with Red Wine)
Why this recipe works
- Layered flavour: Browning the beef, toasting the tomato purée and spices, then deglazing with wine builds a deeper, more rounded sauce.
- Balanced richness: Red wine vinegar cuts through the richness of the beef and tomatoes, keeping the stew savoury rather than heavy.
- Slow-cooked tenderness: A gentle simmer gives the beef time to soften while the whole shallots become sweet and tender without losing their shape.

Timing notes
- Let it rest before serving: Standing the stew off the heat helps the sauce settle and thicken slightly, giving a better texture in the bowl.
- Even better the next day: Like many braised stews, stifado develops deeper flavour after chilling and reheating gently.
Authenticity notes
- Whole shallots are key: Keeping the shallots whole is part of the character of stifado, giving the stew its distinctive sweet onion pockets.
- Warm spice, not heat: Cinnamon, cloves and bay leaves give stifado its recognisable aromatic profile without making the dish spicy.
Common mistakes
- Avoid a hard boil: Keep the stew at a low, steady simmer; boiling can tighten the beef and cause the shallots to break apart.
- Brown in batches: If the beef is packed too tightly into the pot, it will steam instead of browning, leaving the sauce less savoury.
Make-ahead tips
- Reheat gently: Warm the stew over low heat until piping hot, adding a splash of water if the sauce has thickened too much.
- Freeze in portions: Cool completely before freezing, then defrost overnight in the fridge and reheat slowly to protect the texture of the beef and shallots.

Ingredients
Instructions
- Pat the beef dry and season with the salt and black pepper. Peel the shallots, keeping them whole, and lightly crush the garlic cloves with the side of a knife. Heat the olive oil in a Dutch oven over medium-high heat.
- Brown the beef in batches until well coloured on all sides, 6 to 8 minutes per batch, then transfer to a plate. Lower the heat to medium and add the shallots to the pot. Cook for 6 to 8 minutes, stirring often, until lightly golden in places.
- Stir in the garlic and cook for 1 minute until fragrant. Add the tomato purée, cinnamon, cloves and bay leaves, and cook for 1 minute to toast the spices. Pour in the red wine and vinegar, scraping up any browned bits from the base of the pot.
- Return the beef and any juices to the pot, then add the chopped tomatoes and water. Bring to a gentle simmer, then cover with the lid slightly ajar and cook on low for 2 hours, stirring occasionally, until the beef is very tender and the shallots are soft. If the sauce looks thin, simmer uncovered for 10 to 15 minutes to thicken.
- Taste and adjust seasoning if needed. Let the stifado stand off the heat for 10 minutes so the sauce settles and thickens slightly. Serve hot, making sure each portion gets plenty of shallots and sauce.
Recipe notes
Tips
- Keep the simmer very gentle; a hard boil can make the beef tough and break up the shallots.
- For a smoother sauce, press the shallots down into the liquid as it cooks so they soften evenly.
- If serving vulnerable groups, ensure the stew is simmered steadily and the beef is fully cooked until tender throughout.
Substitutions
- Replace Dry Red Wine with a lighter-bodied Dry Red Wine if you prefer a less robust sauce.
- Replace Red wine vinegar with a smaller amount of Red wine vinegar for a softer tang, then adjust to taste at the end.
- Replace Ground cinnamon with a smaller amount of Ground cinnamon for a subtler warm spice note.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container. Reheat gently in a pot over low heat, adding a splash of water if the sauce has thickened too much; bring to a steady simmer until piping hot. Freeze in portions for up to 3 months and defrost overnight in the fridge before reheating.
