Stifado (Greek Slow Cooked Beef and Onion Stew)
Why this recipe works
- Deep, savoury base: Browning the beef and onions first creates a richer foundation before the wine, tomatoes and aromatics are added.
- Gentle braising: A low simmer lets the beef become tender while the pearl onions soften without falling apart.
- Bright finish: Red wine vinegar added at the end cuts through the richness and brings the tomato and wine sauce into balance.

Ingredient notes
- Use small whole onions: Pearl onions are ideal because they hold their shape and give stifado its distinctive sweet onion character.
- Keep the warm spices restrained: Cinnamon and cloves should perfume the sauce rather than dominate it; the long simmer will draw out their flavour.
- Finish with vinegar to taste: Add the red wine vinegar at the end so its brightness stays clear and fresh against the rich braise.
Common mistakes
- Crowding the beef: Brown the beef in batches so it sears properly; overcrowding traps steam and weakens the flavour of the sauce.
- Boiling the stew: Keep the heat low once the liquid is added. A hard boil can toughen the meat and break down the onions too quickly.
- Reducing too aggressively: Thicken the sauce gently at the end rather than boiling it hard, which can make the stew heavy and overly concentrated.
Make-ahead tips
- Excellent the next day: Stifado benefits from resting overnight in the fridge, as the wine, tomato and spice flavours continue to settle.
- Reheat gently: Warm it slowly on the hob with a small splash of water if needed, keeping the heat low to protect the onions and sauce.
- Freezes well: Cool completely before freezing, then thaw overnight in the fridge and reheat gently until piping hot.
Authenticity notes
- Sweet spices in a savoury stew: The combination of tomato, wine, onion, cinnamon, cloves and bay is a defining feature of stifado’s aromatic Greek style.
- Built for slow cooking: The dish is designed for a patient braise rather than a quick stew, giving the meat time to soften and the sauce time to deepen.

Ingredients
Instructions
- Pat the beef dry and season all over with the salt and pepper. Lightly crush the garlic cloves with the flat of a knife and set aside.
- Heat the olive oil in a Dutch oven over medium-high heat. Brown the beef in batches so it sears rather than steams, 6 to 8 minutes per batch, then transfer to a plate.
- Lower the heat to medium and add the pearl onions to the pot. Cook for 6 to 8 minutes, stirring, until they take on a little colour.
- Add the garlic, cinnamon, cloves and bay leaves, and cook for 1 minute until fragrant. Pour in the red wine and scrape up any browned bits from the base of the pot.
- Stir in the chopped tomatoes and water, then return the beef and any juices to the pot. Bring to a gentle simmer, then cover and cook on low heat for 2 hours, stirring occasionally, until the beef is very tender and the onions are soft.
- Uncover and simmer for 5 to 10 minutes to thicken slightly, keeping the heat gentle. Stir in the red wine vinegar, taste, and adjust with a little more salt and pepper if needed.
Recipe notes
Tips
- For the best flavour, take time to brown the beef well and avoid overcrowding the pot.
- Keep the simmer very gentle so the onions stay intact and the sauce turns glossy rather than reducing too fast.
Substitutions
- Replace Dry Red Wine with dry white wine for a lighter, slightly sharper sauce.
- Replace Red wine vinegar with sherry vinegar for a rounder finish.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container. Reheat gently on the hob over low heat with a splash of water until piping hot; freeze for up to 3 months and thaw overnight in the fridge before reheating.
