Gâteau Basque (Basque Custard Cake)

From the French Basque country, gâteau Basque sits somewhere between a tart and a cake: a tender, buttery pastry shell enclosing a firm, sliceable filling. This version uses thick vanilla custard lifted with unwaxed lemon zest, giving the rich centre a clean citrus note without making it sharp. The dough is pressed into a springform tin rather than handled like delicate pastry, then baked at 180°C (355°F) until deeply golden with the traditional scored top. Served fully cooled, it cuts neatly into generous wedges and works well as a make-ahead dessert, especially with coffee or a simple fruit accompaniment.

Why this recipe works

  • Set, creamy filling: The custard is thickened before baking, helping it hold its shape once the cake has cooled.
  • Buttery pastry contrast: A soft enriched dough bakes into a golden, tender shell around the smooth custard centre.
  • Ideal to make ahead: The cake needs time to cool completely, so it fits well into advance preparation for serving later.

Timing notes

  • Cool the custard before assembling: Room-temperature custard is easier to spread and is less likely to soften the dough before baking.
  • Chill the dough until manageable: The dough should be firm enough to press or roll without sticking heavily or tearing.
  • Slice only once fully cooled: Cooling allows the custard to set properly, giving cleaner slices and a neater centre.

Common mistakes

  • Adding hot milk too quickly: Whisk the hot milk into the eggs gradually to avoid scrambling the custard base.
  • Letting the custard catch: Keep whisking right into the corners of the pan while it thickens, as the mixture can scorch quickly.
  • Under-thickening the custard: The custard should be very thick before it goes into the cake; a loose filling will not slice as cleanly.

Authenticity notes

  • Basque-style bake: Gâteau Basque is known for its golden pastry crust and enclosed filling, often made with custard or cherry jam.
  • Scored top: A simple criss-cross pattern on the surface is a recognisable finish and helps define the cake before baking.

Make-ahead tips

  • Make components ahead: The custard and dough can be prepared in advance and kept chilled until ready to assemble.
  • Freeze in slices: Wrap cooled slices well, then defrost overnight in the fridge before bringing them to cool room temperature.

Instructions

  1. Make the custard first. Put the milk in a saucepan with the vanilla and finely grated lemon zest, then heat until steaming but not boiling.
  2. In a bowl, whisk the eggs with the sugar, cornflour and salt until smooth. Slowly whisk in the hot milk, then return everything to the pan.
  3. Cook over medium heat, whisking constantly, until very thick and bubbling, about 2 to 4 minutes. Scrape into a bowl, press a piece of baking paper directly on the surface to prevent a skin, and cool to room temperature.
  4. Make the dough. Beat the butter, sugar and salt until pale and creamy, then beat in 1 egg plus 1 egg yolk, reserving the remaining egg white for sealing and glazing later.
  5. Add the flour and mix just until a soft dough forms. Divide into two pieces, about two-thirds and one-third, flatten into discs, and chill until firm enough to handle.
  6. Heat the oven to 180°C (355°F). Press the larger piece of dough evenly over the base and up the sides of a 20 cm springform tin, aiming for an even thickness.
  7. Whisk the cooled custard briefly until smooth, then spread it into the lined tin, leaving a small border at the top. Roll or press the remaining dough into a round to cover the filling, then lay it on top and seal the edges.
  8. Brush the top lightly with the reserved egg white and score a simple criss-cross pattern with the tip of a knife. Bake for 40 to 45 minutes until deep golden and set, then cool completely before slicing for clean pieces.

Recipe notes

Tips

  • For the cleanest slices, cool the cake fully, then chill for 1 hour before cutting with a sharp knife.
  • When thickening the custard, keep whisking into the corners of the pan so it does not catch and turn lumpy.
  • If serving to young children, pregnant people, older adults, or anyone immunocompromised, use pasteurised eggs.

Substitutions

  • Replace Vanilla extract with vanilla bean paste for a more pronounced vanilla flavour.
  • Replace Lemon with orange for a softer citrus note in the custard.

Storage

  • Refrigerate up to 3 days
  • Store covered in the fridge. Freeze slices well wrapped, then defrost overnight in the fridge and bring to cool room temperature before serving.
