Andouillette à la Moutarde (Sausage in Creamy Mustard Sauce)
Why this recipe works
- Built-in depth: Browning the andouillette first creates savoury pan juices that enrich the shallot, wine and mustard sauce.
- Rich but balanced: Dry white wine and Dijon mustard cut through the cream, keeping the sauce tangy rather than heavy.
- Fast bistro-style cooking: The sausages and sauce are cooked in the same pan, giving a full-flavoured result in about 30 minutes.

Ingredient notes
- Choosing andouillette: Andouillette has a distinctive aroma and pronounced savoury character, so it suits bold accompaniments such as mustard, wine and cream.
- Mustard choice: Dijon gives the smoothest, sharpest sauce; whole-grain mustard makes it milder and adds texture.
Texture tips
- Keep the sauce smooth: Once the cream is added, keep the heat low and warm the sauce gently rather than boiling it.
- Brown the sausages well: Patting the sausages dry before cooking helps them colour more evenly and gives the sauce a deeper base.
Make-ahead tips
- Best served immediately: The sauce has its best texture just after cooking, when it lightly coats the sausages.
- Reheat gently: Warm leftovers over a low heat until piping hot, adding a small splash of water if the sauce has thickened.
Serving ideas
- Serve with potatoes: Mashed potatoes, boiled potatoes or chips work well for catching the creamy mustard sauce.
- Finish with parsley: A little fresh parsley adds colour and a clean herbal note against the rich sauce.

Ingredients
Instructions
- Pat the andouillette sausages dry, then season lightly with the fine sea salt and black pepper. Peel and finely slice the shallot. Finely chop the fresh parsley.
- Melt half the unsalted butter in a frying pan over a medium heat. Add the sausages and cook for 10 to 12 minutes, turning often, until well browned and heated through. Transfer to a warm plate.
- Add the remaining butter to the pan, then add the shallot with a pinch of the salt. Cook for 3 to 4 minutes until softened but not coloured, scraping up any browned bits. Pour in the dry white wine and simmer for 3 to 4 minutes until reduced by about half.
- Stir in the Dijon mustard until smooth, then lower the heat and stir in the double cream. Warm gently for 2 to 3 minutes until the sauce lightly coats the back of a spoon; do not let it boil. Taste and adjust with a little more salt and pepper if needed.
- Return the sausages to the pan and turn them in the sauce for 1 to 2 minutes to glaze. Sprinkle over the parsley and serve straight away with plenty of sauce spooned on top.
Recipe notes
Tips
- Andouillette has a distinctive aroma; browning it well first helps round out the flavour before you add the wine and cream.
- Keep the heat low once the double cream goes in, as boiling can cause the sauce to split.
- If serving anyone who is pregnant, elderly, or immunocompromised, ensure the sausages are piping hot all the way through before serving.
Substitutions
- Replace Dry White Wine with Dry Sherry for a slightly richer, nuttier sauce.
- Replace Dijon mustard with Whole-grain mustard for a milder heat and a more textured sauce.
Storage
- Refrigerate up to 2 days
- Cool, then refrigerate in a sealed container for up to 2 days. Reheat gently in a frying pan over a low heat until piping hot, adding a small splash of water if the sauce has thickened.
