Creamy Mushroom Vol-au-Vents (Puff Pastry Cases)

Crisp puff pastry cases filled with a savoury sauce are what make vol-au-vents such an enduring French-inspired appetiser: light enough to serve before a meal, but rich enough to feel properly special. Here the filling centres on mushrooms cooked until their moisture has evaporated and their flavour has deepened, then finished with white wine, double cream, Dijon mustard and parsley. The result is creamy and earthy rather than heavy, with the sharpness of mustard and wine cutting through the richness. Serve them as soon as they are filled so the pastry stays flaky and the mushroom sauce remains warm and glossy.

Why this recipe works

  • Crisp pastry contrast: The puff pastry cases bake separately, so they stay light and crisp against the creamy mushroom filling.
  • Deep mushroom flavour: Cooking the mushrooms until their liquid evaporates concentrates their savoury flavour before the wine and cream are added.
  • Balanced richness: Dry white wine and Dijon mustard cut through the double cream, keeping the filling rich without feeling heavy.

Texture tips

  • Keep the pastry cold: Chilled puff pastry rises more cleanly and holds its shape better in the oven.
  • Fill just before serving: Spoon the mushrooms into the cases at the last moment so the pastry keeps its crisp layers.
  • Reduce the filling properly: The cream should lightly coat the mushrooms rather than pool in the pan; simmer gently until the sauce has enough body.

Ingredient notes

  • Use all-butter puff pastry if possible: All-butter pastry gives a richer flavour and more delicate crispness than many standard puff pastry sheets.
  • Button mushrooms work well: Their mild, savoury flavour suits the creamy sauce, though mixed mushrooms can add a deeper, earthier note.
  • Wine adds lift: Dry white wine brings acidity to the filling; let it reduce before adding cream so the sauce tastes rounded rather than sharp.

Make-ahead tips

  • Store pastry and filling apart: Keep the baked cases and mushroom filling separate in the fridge to protect the pastry’s texture.
  • Refresh before serving: Warm the filling gently until piping hot and crisp the pastry in a 180°C (355°F) oven for 5 to 7 minutes before filling.
  • Assemble at the table: For parties, keep the filling warm and spoon it into the cases shortly before serving.

Instructions

  1. Heat the oven to 200°C (390°F) and line a baking tray with parchment paper. Put the puff pastry in the fridge while you prep the filling so it stays cold and bakes up well.
  2. Finely chop the shallots, crush the garlic, and slice the mushrooms. Finely chop the parsley and set it aside for finishing.
  3. On a lightly floured surface, roll the puff pastry to about 3 mm thick. Cut 8 rounds (about 7 to 8 cm), then cut a smaller round from the centre of 4 of them to make rings; keep the centres to bake alongside as lids or cooks’ treats. Brush a little melted butter on the solid bases, then set the rings on top and brush the tops with more butter.
  4. Bake for 15 to 18 minutes until well risen, crisp and deep golden. If the centres puff up too much, gently press them down with the back of a spoon while still hot to create a cavity.
  5. While the pastry bakes, melt the remaining butter in a large frying pan over a medium heat. Add the shallots with a pinch of the salt and cook for 2 to 3 minutes until softened, then add the garlic and cook for 30 seconds until fragrant.
  6. Add the mushrooms and cook over a medium-high heat for 6 to 8 minutes, stirring occasionally, until their liquid has evaporated and they are lightly browned. Season with the remaining salt and the black pepper.
  7. Pour in the white wine and simmer for 2 to 3 minutes until reduced by about half. Stir in the double cream and simmer gently for 3 to 5 minutes until the sauce lightly coats the mushrooms; do not let it boil hard.
  8. Take the pan off the heat and stir in the Dijon mustard and most of the parsley, reserving a little to finish. Taste and adjust seasoning if needed.
  9. Spoon the creamy mushrooms into the warm vol-au-vent cases and sprinkle with the reserved parsley. Serve straight away while the pastry is crisp.

Recipe notes

Tips

  • Keep the puff pastry cold right up until baking; warm pastry can slump and bake less evenly.
  • Cook the mushrooms until their moisture has evaporated and they start to brown, otherwise the filling can turn watery.
  • If serving to children or anyone avoiding alcohol, simmer the wine until it smells less sharp and more mellow before adding the cream.

Substitutions

  • Replace Dry White Wine with the same amount of water for an alcohol-free version, then simmer a minute longer to concentrate the flavour.
  • Replace Dijon mustard with whole-grain mustard for a milder, more textured finish.
  • Replace Fresh parsley with fresh chives for a more delicate onion note.

Storage

  • Refrigerate up to 2 days
  • Store the mushroom filling and baked pastry cases separately in the fridge. Reheat the filling gently in a frying pan until piping hot, and crisp the pastry in a 180°C (355°F) oven for 5 to 7 minutes, then fill just before serving.
