Moroccan Almond Briouats (Filo Pastry Triangles with Honey)

Moroccan almond briouats are small triangular pastries with a crisp, shattering filo shell and a sweet almond filling scented with cinnamon and orange blossom water. After frying, the pastries are briefly dipped in warm perfumed honey, giving them their characteristic glossy finish and sticky, aromatic sweetness. Roasted sesame seeds add a nutty final crunch. Often served with mint tea or as part of a sweet pastry selection, they are rich enough for festive occasions but practical to make in batches, with the folding and frying creating their distinctive texture.

Why this recipe works

  • Crisp pastry contrast: Thin buttered phyllo fries quickly into a delicate shell around the soft almond filling.
  • Fragrant filling: Almonds, cinnamon and orange blossom water create the floral, nutty flavour associated with Moroccan sweet pastries.
  • Glossy honey finish: A short dip in warm honey sweetens the pastry without soaking it for too long, keeping the outside crisp once set.

Timing notes

  • Dip while hot: Move the briouats from the oil straight into the warm honey so the coating clings evenly.
  • Let the glaze set: Allow the pastries to cool before serving; the honey firms slightly and the texture becomes less sticky.
  • Folding takes the time: Most of the work is shaping the phyllo triangles, while the frying itself happens quickly in batches.

Ingredient notes

  • Use blanched almonds: Blanched almonds give the filling a pale colour and smooth texture; avoid over-processing or the nuts can turn oily.
  • Orange blossom water: Orange blossom water is potent, so it should perfume the filling and honey rather than dominate them.
  • Choose a fluid honey: A lighter honey gives a clearer glaze and lets the almond and floral notes come through.

Texture tips

  • Drain after dipping: Let excess honey drip back into the pan before transferring the briouats to a plate.
  • Refresh before serving: If the pastries soften in storage, warm them in a 160°C (320°F) oven until crisp, then cool before serving.
  • Watch the colour: Remove the briouats when deeply golden; phyllo can move from crisp to overly dark very quickly.

Authenticity notes

  • Fried then honeyed: Sweet Moroccan briouats are commonly fried until crisp, then dipped in scented honey for their glossy finish.
  • Serve with tea: The floral sweetness pairs naturally with Moroccan mint tea or other lightly bitter hot drinks.

  1. Melt the butter for assembling and set it aside to cool slightly. In a food processor, pulse the almonds with the salt and cinnamon until finely ground, stopping before it turns oily. Add the butter for the filling and the orange blossom water, then pulse until the mixture clumps into a soft paste.
  2. Roll the almond paste into small balls, about the size of a large marble, to make portioning easy. Cover and set aside while you prepare the pastry. Keep the phyllo covered with a barely damp cloth so it does not dry out.
  3. Lay one sheet of phyllo on the work surface and brush lightly with the melted butter. Fold it lengthways into a long strip about 5 cm wide. Place a ball of almond filling near one end and fold into a triangle, continuing to fold along the strip to keep the triangular shape.
  4. Brush the final flap with a little more butter and tuck it in to seal. Repeat with the remaining phyllo and filling, keeping the formed briouats covered as you work. If any strips tear, double them up and continue folding.
  5. Warm the honey in a saucepan over low heat until fluid, then stir in the orange blossom water and keep it warm. Heat the sunflower oil in a frying pan over medium heat until a small piece of phyllo sizzles immediately. Fry the briouats in batches for 2 to 4 minutes, turning, until deep golden and crisp.
  6. Lift the briouats out with tongs and dip them straight into the warm honey for 10 to 20 seconds, turning to coat. Let the excess drip back into the pan, then transfer to a plate. Sprinkle with roasted sesame seeds while still sticky, and leave to cool and set.

Recipe notes

Tips

  • Keep the phyllo covered with a barely damp cloth at all times; once it dries it becomes brittle and hard to fold neatly.
  • Aim for medium heat when frying so the pastry colours evenly and the filling warms through without the outside darkening too fast.
  • Food safety: take extra care with hot oil, and avoid serving to very young children unless the briouats have cooled fully and the honey coating has set.

Substitutions

  • Replace Orange Blossom Water with rose-water for a different, but still traditional, floral perfume.
  • Replace Honey with acacia-honey for a lighter flavour and a clearer glaze.

Storage

  • Refrigerate up to 5 days
  • Store in an airtight container at cool room temperature for up to 3 days, or in the fridge for up to 5 days. To refresh, warm in a 160°C (320°F) oven for 5 to 7 minutes until crisp, then cool before serving.
