Coca de Recapte (Catalan Savoury Flatbread)
Why this recipe works
- Built-in savoury depth: Slowly softened onion and pepper bring sweetness, while anchovies add a concentrated salty finish.
- Crisp-edged base: Rolling the olive oil dough thin helps the edges turn golden and crisp while the centre stays sturdy enough for the topping.
- Flexible serving: The flatbread can be served warm or at room temperature, making it useful for sharing, picnics, lunches, or aperitif-style meals.

Timing notes
- Allow the dough to rise fully: The first rise gives the dough enough structure and lightness; if your kitchen is cool, it may need longer than the stated time.
- Cool the topping slightly: Let the pepper and onion mixture lose its heat before spreading it over the dough so it does not soften the base too much.
- Best serving window: Serve shortly after baking for the crispest edges, or let it come to room temperature for a more traditional sharing-style presentation.
Authenticity notes
- Catalan style: Coca de recapte is part of the Catalan coca family: savoury, open-faced flatbreads often topped with cooked vegetables and preserved fish.
- Common variations: Anchovies are a classic salty topping, though similar cocas may use other preserved fish or simply focus on the vegetable topping.
Texture tips
- For a crisper base: Preheat the baking tray, then transfer the topped dough onto the hot surface just before baking.
- Keep moisture in check: Cook the peppers and onions until jammy rather than wet, adding only a splash of water if they start to catch.
Make-ahead tips
- Prepare the topping ahead: The onion and pepper mixture can be cooked in advance, cooled, and refrigerated until needed.
- Reheat for crispness: Reheat slices on a baking tray at 200°C (390°F) until hot and the base has crisped again.
- Freeze baked slices: Cool completely, wrap well, and freeze in slices so they can be reheated directly from frozen.

Instructions
- In a mixing bowl, stir together the flour, instant yeast and salt. Add the lukewarm water and olive oil, then mix to a shaggy dough and knead for 8 to 10 minutes until smooth and elastic. Cover and leave to rise until doubled in size.
- Meanwhile, heat the oven to 220°C (430°F). Slice the onions and peppers into thin strips. Heat the olive oil in a frying pan over medium heat, add the onions with a pinch of salt, and cook for 10 minutes until soft and starting to turn golden.
- Add the peppers to the pan with the remaining salt and cook for 10 to 15 minutes, stirring often, until the peppers are tender and the mixture is sweet and jammy. If it starts to catch, add a splash of water and scrape up the browned bits. Take off the heat and let it cool slightly.
- Tip the risen dough onto a lightly floured surface and roll it into a rough rectangle about 5 mm thick. Transfer to a baking tray and press out again if it shrinks back. Spread the onion and pepper mixture evenly over the dough, leaving a small border.
- Lay the anchovy fillets over the top. Bake for 15 to 18 minutes until the edges are crisp and deeply golden and the base is cooked through. Rest for 5 minutes before slicing and serving warm or at room temperature.

Tips
- For a crisper base, preheat the baking tray in the oven, then slide the topped dough onto the hot tray.
- If you are serving anyone who should avoid raw fish, use anchovy fillets that are fully cured and ready to eat, and bake the coca until piping hot throughout.
- Let the topping cool slightly before spreading so it does not soften the dough and make it harder to shape.
Substitutions
- Replace Red pepper with Yellow pepper for a slightly sweeter topping.
- Replace Yellow onion with Red onion for a deeper, more caramelised flavour.
- Replace Plain flour with Bread flour for a chewier crumb and a crisper edge.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in an airtight container. Reheat on a baking tray at 200°C (390°F) for 6 to 8 minutes until hot and crisp. Freeze slices well wrapped for up to 2 months and reheat from frozen at 200°C (390°F) for 10 to 12 minutes.
