Empanada Gallega (Tuna and Pepper Pie)

In Galicia, empanada gallega refers to a large savoury pie made for slicing and sharing, rather than the small hand pies often associated with empanadas elsewhere. This version has an olive oil-enriched pastry wrapped around a tuna, onion and red pepper filling cooked down with tomato passata and sweet paprika until sweet, savoury and well concentrated. The pastry bakes crisp and golden while the filling stays moist enough to cut cleanly after a short rest. It is especially practical because it serves well warm or at room temperature, making it suited to lunch, picnics, buffets or make-ahead meals.

Why this recipe works

  • Built-in savoury depth: Slowly softened onions and peppers create a sweet base before tomato, paprika and tuna add richness and umami.
  • Crisp olive oil pastry: The enriched dough bakes into a sturdy, golden crust that holds the filling without becoming heavy.
  • Flexible serving: Because it slices cleanly and tastes good warm or at room temperature, it works for lunches, picnics and sharing plates.

Timing notes

  • Cool the filling before assembling: Let the tuna and pepper mixture lose its heat before spreading it over the dough, otherwise the pastry can soften before baking.
  • Rest before slicing: A short rest after baking helps the filling settle, giving cleaner slices and a better crust-to-filling structure.

Authenticity notes

  • Galician style: Empanada Gallega is typically made as a large flat pie rather than individual pastries, then cut into squares or wedges for serving.
  • Filling variations: Tuna and peppers are a familiar version, but Galician empanadas are also made with other seafood, meat or vegetable fillings.

Texture tips

  • Thicken the filling well: Simmer the tomato mixture until it looks jammy rather than loose, so the base stays crisp and the filling does not leak.
  • Seal firmly: Press and crimp the edges well, then cut a steam hole in the centre to help the pastry bake evenly.

Make-ahead tips

  • Make ahead for easy serving: Bake the empanada in advance, cool it completely, then refrigerate it until needed.
  • Reheat for a crisper finish: Warm slices on a baking tray rather than in the microwave to help revive the pastry.

  1. Tip the flour into a mixing bowl and stir in 1 tsp of the fine sea salt. Add 120 ml of the extra virgin olive oil and the warm water, then mix and knead until smooth and supple. Cover and rest for 20 minutes at room temperature.
  2. Meanwhile, slice the onion and cut the red peppers into thin strips. Warm the remaining olive oil in a frying pan over medium heat, then cook the onion with a pinch of the remaining salt for 8 minutes until soft. Add the peppers and cook for 10 to 12 minutes until very tender and sweet.
  3. Stir in the sweet paprika and cook for 30 seconds, then add the tomato passata. Simmer for 8 to 10 minutes until thick and jammy, then fold in the drained tuna and season with the black pepper and the remaining salt. Take off the heat and leave to cool for 10 minutes so it does not soften the pastry.
  4. Heat the oven to 200°C (390°F). Divide the dough into two pieces, one slightly larger than the other, then roll the larger piece into a rectangle about 3 mm thick and set it on a baking tray. Spoon the filling over, leaving a 2 cm border all around.
  5. Roll out the remaining dough to cover the filling, then lay it on top and press the edges together to seal, crimping firmly. Cut a small steam hole in the centre. Beat the egg and brush it over the top.
  6. Bake for 30 to 35 minutes until deeply golden and crisp. Rest for 10 minutes before slicing so the filling sets. Serve warm or at room temperature.

Recipe notes

Tips

  • If the dough feels dry, add a little more water, 1 tbsp at a time, until it comes together smoothly.
  • For clean slices, let the empanada cool to warm before cutting with a serrated knife.
  • If serving vulnerable groups, use a pasteurised egg for the glaze.

Substitutions

  • Replace the sweet paprika with smoked paprika for a smokier flavour.
  • Replace the tomato passata with canned crushed tomatoes for a chunkier filling.

Storage

  • Refrigerate up to 3 days
  • Cool completely, then refrigerate in a sealed container. Reheat slices on a baking tray at 180°C (355°F) for 10 to 12 minutes until piping hot, or thaw overnight in the fridge and reheat the same way.
