Empanada Gallega de Atún (Galician Tuna Empanada Pie)
Why this recipe works
- Slow-built filling: Cooking the onion and red pepper before adding tomato creates a sweet, savoury base that balances the tuna.
- Crisp olive-oil pastry: The sturdy dough bakes into a golden crust that holds its shape well when sliced.
- Flexible serving: The pie is satisfying warm but also works well at room temperature, which makes it useful for packed lunches and sharing.

Authenticity notes
- Galician style: Empanada gallega is typically baked as a large enclosed pie and cut into squares or slices, rather than made as individual hand pies.
- Filling variations: Tuna is a classic choice, but the same format is often adapted with other savoury fillings such as meat, seafood or vegetables.
Timing notes
- Rest the dough: A short rest makes the olive-oil dough easier to roll and helps it bake with a better texture.
- Cool the filling: Letting the tomato and tuna mixture cool slightly before assembly helps protect the pastry and makes sealing easier.
- Serve warm or room temperature: After baking, a brief rest helps the filling settle so the slices hold together more neatly.
Texture tips
- Thicken the filling well: Cook the tomato mixture until most of the liquid has evaporated; a loose filling can soften the base and leak at the edges.
- Seal the edges firmly: Press and crimp the pastry well, then cut a steam hole so the crust bakes evenly without splitting.
Make-ahead tips
- Prepare ahead: The filling can be cooked in advance and chilled, then brought closer to room temperature before assembling the pie.
- Reheat for crispness: Reheat slices in a 180°C (355°F) oven until piping hot to refresh the pastry better than microwaving.
- Freeze after baking: Cool completely, wrap well and freeze; defrost overnight in the fridge before reheating.

Instructions
- Make the dough: tip the flour into a bowl and stir in the salt. Add the olive oil and warm water, then mix and knead for 3 to 4 minutes until smooth and supple. Cover and rest for 20 minutes at room temperature.
- Meanwhile, make the filling: finely slice the onion and dice the red pepper. Warm the olive oil in a saucepan over a medium heat, then cook the onion and pepper with a pinch of the salt for 10 to 12 minutes until soft and sweet. Stir in the paprika for 30 seconds.
- Add the tomatoes and bring to a gentle simmer. Cook for 12 to 15 minutes, stirring now and then, until thick and jammy with very little liquid left in the pan. Season with the black pepper and a little more salt if needed, then take off the heat and cool for 10 minutes.
- Stir the drained tuna into the cooled tomato mixture, breaking it up into flakes. Heat the oven to 200°C (390°F). Lightly oil a baking tray.
- Divide the dough into two pieces, one slightly larger than the other. Roll the larger piece into a rectangle about 3 mm thick and lay it on the tray. Spread the filling over the dough, leaving a 2 cm border all around.
- Roll out the remaining dough to the same thickness and lay it over the filling. Press the edges together firmly, then crimp to seal; cut a small steam hole in the centre. Bake for 30 to 35 minutes until deep golden and crisp.
- Rest for 10 minutes before slicing so the filling sets. Serve warm or at room temperature.
Recipe notes
Tips
- Cook the tomato mixture until it is properly thick; a wet filling can make the pastry soggy and harder to seal.
- If the top is browning too quickly, move the tray to a lower shelf for the final 10 minutes of baking.
Substitutions
- Replace Yellow onion with white onion for a slightly sharper flavour.
- Replace Sweet paprika with smoked paprika for a smokier filling.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container. Reheat slices in a 180°C (355°F) oven for 10 to 12 minutes until piping hot, or serve at room temperature. Freeze well wrapped for up to 2 months; defrost overnight in the fridge before reheating.
