Poule au Pot Henri IV (French Chicken and Vegetable Stew)
Why this recipe works
- Gentle poaching: A low, trembling simmer keeps the broth clear while cooking the whole chicken evenly and tenderly.
- Clean aromatic depth: Leeks, carrots, celery, onion, garlic, thyme and bay infuse the broth without making it heavy.
- Simple, complete serving: The chicken, vegetables and broth are served together, giving the dish the warmth of a stew with the clarity of a good stock.

Authenticity notes
- Henri IV association: Poule au pot is widely linked with the French king Henri IV and the idea of a nourishing chicken in every pot.
- Home-style rather than restaurant-style: The dish is traditionally modest and generous: carved chicken, tender vegetables and clear broth served together.
Timing notes
- Rest before carving: Letting the chicken rest briefly after simmering helps the meat settle and makes it easier to carve cleanly.
- Serve hot and brothy: The dish is at its best when the carved chicken and vegetables are served with the broth freshly reheated and glossy.
Common mistakes
- Avoid a rolling boil: Boiling hard can cloud the broth and toughen the chicken; keep the liquid barely trembling.
- Do not oversimmer the chicken: Once the thigh is cooked through and the meat is tender, lift the chicken out rather than leaving it to continue cooking.
Make-ahead tips
- Store gently: Keep the chicken, vegetables and broth in sealed containers in the fridge, then reheat carefully until piping hot.
- Freeze in portions: The cooked chicken and broth can be frozen in portions; defrost overnight in the fridge before reheating.

Instructions
- Trim and rinse the leeks well, then cut them into large lengths. Peel the carrots and cut into large chunks; cut the celery into large pieces. Peel the onion and halve it; lightly crush the garlic cloves.
- Put the chicken in a stockpot and add the water, leeks, carrots, celery, onion, garlic, bay leaves, peppercorns, thyme and fine sea salt. Bring to a gentle simmer over medium heat, skimming any foam from the surface. Reduce to low so the broth barely trembles.
- Simmer gently for 75 to 85 minutes, turning the chicken once or twice, until the meat is tender and the thickest part of the thigh is cooked through. The broth should stay clear, so avoid a hard boil. If the liquid drops below the chicken, top up with a little more water from the kettle.
- Lift the chicken onto a board and let it rest for 10 minutes. Use tongs to transfer the vegetables to a warm serving dish. Ladle the broth through a sieve into a clean pot, then return it to low heat.
- Whisk the unsalted butter into the hot broth until melted and glossy, then taste and adjust with a little more fine sea salt if needed. Carve the chicken into serving pieces. Serve the chicken and vegetables with plenty of the broth ladled over.
Recipe notes
Tips
- Keep the simmer very gentle to maintain a clear, delicate broth; a rolling boil will make it cloudy.
- For extra depth, let the finished broth stand off the heat for 5 minutes, then skim any fat from the surface before whisking in the butter.
- Food safety: make sure the chicken is cooked through before serving; vulnerable groups should avoid undercooked poultry.
Substitutions
- Replace Fresh thyme with 1 tsp Dried thyme for a similar herbal note.
- Replace Unsalted butter with Salted butter, then reduce the Fine sea salt to taste at the end.
Storage
- Refrigerate up to 3 days
- Cool the chicken, vegetables and broth quickly, then refrigerate in sealed containers. Reheat gently in a saucepan until piping hot; avoid boiling hard to keep the chicken tender. Freeze in portions for up to 3 months and defrost overnight in the fridge before reheating.
