Moqueca de Camarão (Brazilian Prawn Stew)
Why this recipe works
- Layered savoury base: Onion, garlic, pepper and tomato cook down before the coconut milk is added, giving the stew a rounded, saucy foundation.
- Creamy but bright: Coconut milk creates a rich, smooth sauce, while lime juice added at the end keeps the finish fresh rather than heavy.
- Fast seafood cooking: The prawns are added only at the end, so they cook quickly and stay tender in the hot stew.

Authenticity notes
- Bahian-style character: The combination of coconut milk and palm oil is strongly associated with Bahian-style moqueca, giving the stew its rich colour and distinctive flavour.
- Palm oil matters: Palm oil is not just a cooking fat here; it contributes the warm colour and earthy depth that make this version recognisable.
Common mistakes
- Overcooking the prawns: Add the prawns near the end and simmer only until they turn pink and opaque; longer cooking can make them firm and rubbery.
- Boiling the coconut milk: Keep the stew at a gentle simmer once the coconut milk is added, as vigorous boiling can make the sauce split.
Make-ahead tips
- Make the base ahead: The vegetable and coconut milk base can be prepared in advance, then reheated gently before adding the prawns.
- Add seafood just before serving: For the best texture, cook the prawns shortly before eating rather than storing them in the stew for long periods.
Serving ideas
- Serve with rice: Plain rice works well because it absorbs the coconut-tomato sauce without competing with the prawns.
- Finish fresh: Reserved coriander and a final squeeze of lime sharpen the flavour just before serving.

Instructions
- Prepare the vegetables: finely slice the onion, thinly slice the garlic, deseed and slice the red pepper, and roughly chop the tomatoes. Finely chop most of the coriander, reserving a little to finish. If needed, pat the prawns dry.
- Heat the palm oil in a large pot over a medium heat. Add the onion and cook for 5 to 6 minutes until softened and starting to turn translucent. Stir in the garlic and cook for 1 minute until fragrant.
- Add the red pepper and cook for 3 to 4 minutes, stirring, until it begins to soften. Add the tomatoes and a pinch of salt, then cook for 5 to 6 minutes until the tomatoes break down into a saucy base.
- Pour in the coconut milk and bring to a gentle simmer. Cook for 8 to 10 minutes, stirring occasionally, until slightly thickened and the peppers are tender. Taste and add a little more salt if needed.
- Add the prawns and simmer gently for 3 to 5 minutes, just until pink and opaque throughout. Take off the heat, squeeze in the lime juice, and stir through the chopped coriander. Serve hot, spooning plenty of sauce over the prawns and vegetables, and finish with the reserved coriander.
Recipe notes
Tips
- Keep the stew at a gentle simmer once the coconut milk is added; a hard boil can cause it to split.
- Add the prawns right at the end and cook only until just opaque to keep them tender.
- If serving vulnerable groups, make sure the prawns are cooked through and piping hot before serving.
Substitutions
- Replace Fresh coriander with Fresh parsley if you prefer a milder herbal finish.
- Replace Lime with Lemon for a similar bright, citrusy lift.
Storage
- Refrigerate up to 2 days
- Cool, cover and refrigerate within 2 hours. Reheat gently in a pot over a low heat until piping hot, stirring often; avoid boiling to keep the coconut milk smooth and the prawns tender.
