Moqueca (Brazilian Coconut Fish Stew)
Why this recipe works
- Layered base: Onion, pepper and tomato are cooked down before the coconut milk is added, giving the broth a rounded savoury foundation.
- Creamy but light: Coconut milk gives the stew body without needing a heavy sauce, keeping the fish delicate.
- Fresh finish: Lime juice added at the end brightens the coconut-rich broth and lifts the coriander.

Ingredient notes
- Choose firm white fish: Use skinless white fish that can hold its shape in a gentle simmer, such as cod, haddock or pollock.
- Palm oil flavour: Palm oil gives moqueca its distinctive colour and earthy richness; olive oil works, but the flavour will be less traditional.
- Finish with lime to taste: Add the final lime juice off the heat so the broth stays fresh and the acidity can be adjusted without overcooking the fish.
Texture tips
- Keep the simmer gentle: Once the coconut milk is in, the stew should barely bubble; boiling can break the fish apart and make the sauce look split.
- Cook fish just until opaque: Stop cooking as soon as the fish flakes easily. Thin fillets may need slightly less time than thicker pieces.
Serving ideas
- Serve with rice: Plain rice is the simplest pairing and helps absorb the coconut-lime broth.
- Add coriander at the end: A final scattering of fresh coriander keeps the flavour bright and balances the richness of the stew.
Make-ahead tips
- Prep the vegetables ahead: Slice the onion and pepper and chop the coriander in advance, then cook the stew shortly before serving.
- Reheat gently: Warm leftovers over low heat until piping hot, stirring carefully so the fish stays in pieces and the sauce does not boil.

Ingredients
Instructions
- Cut the fish into large chunks. Finely grate the garlic, then squeeze the limes. Season the fish with 1 tsp of the fine sea salt, the black pepper, the garlic and 2 tbsp lime juice; set aside while you prep the vegetables.
- Thinly slice the onion and red pepper, and cut the tomatoes into wedges. Roughly chop the fresh coriander, keeping a small handful back for serving. Keep the remaining lime juice for finishing.
- Heat the palm oil in a large pot over medium heat. Add the onion with the remaining 0.25 tsp fine sea salt and cook for 5 minutes until softened. Stir in the red pepper and cook for 3 minutes.
- Add the tomatoes and cook for 4 to 5 minutes until they start to break down and look saucy. Pour in the coconut milk and bring to a gentle simmer. Keep the heat low so the stew barely bubbles.
- Nestle the fish into the coconut broth in a single layer as much as possible. Simmer gently for 6 to 8 minutes, turning once, until the fish is just opaque and flakes easily. Stir in most of the coriander and cook for 1 minute more.
- Take the pot off the heat and stir in the remaining lime juice to taste. Rest for 2 minutes so the flavours settle. Serve topped with the reserved coriander.

Serving suggestions
This recipe pairs well with:
Tips
- Keep the stew at a gentle simmer once the coconut milk is in; a hard boil can cause the fish to break up and the sauce to split.
- If your fish fillets are thin, add them a minute or two later and cook only until just opaque to keep them tender.
Substitutions
- Replace palm oil with olive oil for a similar richness, though the flavour will be less traditional.
- Replace red pepper with yellow pepper for a slightly sweeter, milder vegetable base.
Storage
- Refrigerate up to 2 days
- Cool, then refrigerate in a sealed container for up to 2 days. Reheat gently in a saucepan over low heat until piping hot, stirring carefully so the fish stays in pieces; avoid boiling.
