Thai Pumpkin and Tofu Red Curry
Why this recipe works
- Aromatic base: Toasting the red curry paste with garlic and ginger before adding coconut milk helps deepen the flavour of the sauce.
- Balanced finish: Fish sauce, palm sugar and lime bring saltiness, sweetness and sharpness into balance, keeping the coconut-rich curry from tasting flat.
- Gentle, creamy sauce: A low simmer keeps the coconut milk smooth while the pumpkin softens and the tofu warms through without breaking apart.

Adjust the heat
- For a milder curry: Use a milder red curry paste or start with less paste, then adjust after the coconut milk has simmered.
- For more heat: Add extra red curry paste gradually, allowing it to cook briefly so the flavour stays rounded rather than raw.
- Keep the heat balanced: If the curry tastes too fiery, soften it with a little more coconut milk and brighten again with lime to taste.
Dietary alternatives
- Vegetarian version: Use a vegetarian red curry paste and replace the fish sauce with soy sauce, tamari or a mushroom-based seasoning.
- Vegan version: Choose vegan curry paste, swap the fish sauce for a plant-based savoury seasoning, and check that the palm sugar is suitable.
- Gluten-free check: Use gluten-free tamari if replacing the fish sauce, and check the curry paste label as some brands include wheat-based ingredients.
Common mistakes
- Boiling the coconut milk hard: Keep the curry at a gentle simmer; vigorous boiling can make the sauce look oily or split.
- Letting the pumpkin collapse: Simmer the pumpkin only until tender but still holding its shape, as it will continue to soften slightly in the hot sauce.
- Breaking up the tofu: Add the tofu near the end and stir gently so the cubes stay intact.
Make-ahead tips
- Store rice and curry separately: Keep the curry separate from the jasmine rice so the rice does not absorb the sauce and become heavy.
- Reheat gently: Warm the curry over a low heat until piping hot, adding a splash of water if the coconut sauce has thickened.
- Freeze the curry only: Freeze the curry without the rice, then defrost overnight in the fridge before reheating gently.

Ingredients
Instructions
- Rinse the jasmine rice until the water runs mostly clear, then tip into a saucepan with the water. Bring to the boil, cover, and cook on the lowest heat for 12 minutes. Take off the heat and leave covered for 10 minutes.
- Meanwhile, cut the pumpkin into bite-size chunks and cut the tofu into large cubes. Finely grate the garlic and ginger. Pick the Thai basil leaves and set aside.
- Heat the sunflower oil in a large pot over a medium heat. Add the garlic and ginger and cook for 30 seconds until fragrant, then stir in the red curry paste and cook for 1 minute to toast it. Pour in the coconut milk and bring to a gentle simmer.
- Add the pumpkin and simmer for 10 to 12 minutes, stirring occasionally, until the pumpkin is tender but still holds its shape. Add the tofu and simmer for 3 minutes to warm through without breaking it up. Keep the heat gentle so the coconut milk stays smooth.
- Stir in the fish sauce and palm sugar until dissolved, then squeeze in the lime juice to taste. Take off the heat and fold through the Thai basil so it wilts in the residual heat. Serve the curry spooned over the rice.
Recipe notes
Tips
- For a richer curry, let the coconut milk simmer gently for a minute after adding the curry paste before you add the pumpkin.
- If you are cooking for anyone who is pregnant, elderly, or immunocompromised, ensure the tofu is heated until piping hot throughout before serving.
Substitutions
- Replace Fresh Thai basil with Fresh basil for a milder, sweeter herbal finish.
- Replace Palm sugar with Brown sugar for a similar sweetness and colour.
- Replace Sunflower oil with Vegetable oil for a neutral frying oil.
Storage
- Refrigerate up to 3 days
- Cool the curry quickly, then refrigerate in a sealed container for up to 3 days. Reheat gently in a saucepan over a low heat until piping hot, adding a splash of water if it has thickened. Freeze the curry (separately from the rice) for up to 2 months; defrost overnight in the fridge before reheating.
