Beef Kofta Curry
Why this recipe works
- Layered flavour: Aromatics, ground spices and browned koftas build depth before the meatballs finish cooking in the sauce.
- Smooth, tangy gravy: Yoghurt softens the tomato base and adds gentle acidity, giving the curry a rounded, creamy finish.
- Easy to serve: The saucy koftas work well with steamed rice for a simple dinner or with naan for scooping.

Adjust the heat
- For less heat: Leave out the green chilli and rely on the cumin, coriander and garam masala for warmth rather than sharp heat.
- For more heat: Add extra chopped green chilli to the kofta mixture or finish the curry with a little more fresh chilli.
- Keep it rounded: If the curry tastes too fiery, a little extra yoghurt stirred in gently can soften the heat and add tang.
Ingredient notes
- Choose ripe tomatoes: Ripe tomatoes break down more easily and give the sauce a better balance of sweetness and acidity.
- Grate the aromatics: Grating the onion, garlic and ginger helps them blend into the kofta mixture rather than leaving coarse pieces.
- Use plain yoghurt: Plain yoghurt gives the gravy tang and body; avoid sweetened yoghurt, which will make the sauce taste unbalanced.
Texture tips
- Keep the koftas juicy: Mix the beef until it looks slightly sticky so the koftas hold together, but avoid overworking it once combined.
- Protect the yoghurt sauce: Lower the heat before adding the yoghurt and stir it in gradually to help the gravy stay smooth.
- Control the sauce thickness: Simmer gently with the lid on until the koftas are cooked through; loosen the sauce with a splash of water if it reduces too far.
Make-ahead tips
- Good for meal prep: Cool the curry fully before refrigerating in a sealed container; it keeps well for up to 3 days.
- Freeze after cooking: Freeze the cooked curry for up to 2 months, then defrost overnight in the fridge before reheating.
- Reheat gently: Warm the curry over a low heat until piping hot, adding a splash of water if the sauce has thickened.

Instructions
- Grate the onion into a mixing bowl, then finely grate the garlic and ginger into the same bowl. Finely chop the green chilli (if using) and most of the coriander, reserving a small handful for serving.
- Add the minced beef to the bowl with the ground cumin, ground coriander, garam masala, chopped coriander and a pinch of salt. Mix well until the mixture looks slightly sticky, then shape into 12 to 14 small koftas.
- Heat the ghee in a large frying pan over a medium-high heat. Brown the koftas for 5 to 7 minutes, turning to colour all over, then lift them onto a plate.
- Lower the heat to medium and add the tomatoes to the same pan. Cook for 8 to 10 minutes, stirring and pressing them with a wooden spoon, until they break down into a thick, glossy sauce.
- Reduce the heat to low and stir in the yogurt a spoonful at a time so it stays smooth. Return the koftas to the pan, cover and simmer gently for 10 to 12 minutes until the koftas are cooked through and the sauce lightly thickens.

Serving suggestions
This recipe pairs well with:
Tips
- Keep the sauce at a low heat when adding the yogurt, and add it gradually to prevent splitting.
- If the sauce thickens too much while simmering, loosen it with a splash of water and keep the heat gentle.
- For anyone who is pregnant, elderly, or immunocompromised, use pasteurised yogurt and ensure the koftas are cooked until piping hot throughout.
Substitutions
- Replace ghee with butter for a similar richness.
- Replace yogurt with greek-yogurt for a thicker, creamier gravy.
- Replace green chili pepper with a smaller amount of ground-cumin for warmth without extra heat.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container for up to 3 days. Reheat gently in a pan over a low heat until piping hot, adding a splash of water if needed; freeze for up to 2 months and defrost overnight in the fridge before reheating.
