Air Fryer Breakfast Hash

Breakfast hash is a hearty, pan-style morning dish usually centred on crisp potatoes, savoury add-ins and a topping such as a fried egg. Here, the air fryer gives the potatoes, red pepper and onion golden edges without constant turning, while smoked paprika and streaky bacon bring the familiar smoky, salty character of a diner-style hash. The result is crisp in places, tender in the middle and easy to serve straight from the basket. It works well as a weekend breakfast, a simple brunch plate or a flexible base for eggs, herbs and extra heat.

Why this recipe works

  • Crisp potato edges: Small, even potato pieces cook quickly in the air fryer and develop golden edges while staying tender inside.
  • Smoky savoury depth: Smoked paprika seasons the vegetables from the start, while streaky bacon adds extra richness and a crisp finish.
  • Straightforward method: The recipe uses simple chopping, tossing and shaking, with the air fryer doing most of the cooking.

Texture tips

  • For a crisper hash: Keep the potatoes and vegetables spread in a single layer so hot air can circulate around them.
  • Avoid overcrowding: If the basket is packed too tightly, cook in batches rather than piling the vegetables on top of one another.

Common mistakes

  • Adding garlic too early: Garlic colours quickly in an air fryer, so it is added later with the bacon rather than at the start.
  • Running too hot: If your air fryer cooks aggressively, reduce the heat slightly from 200°C (390°F) to keep the garlic from catching before the potatoes finish.

Ingredient notes

  • Best potatoes to use: Russet potatoes work well because they crisp readily and give a fluffy centre once cooked.
  • Paprika choice: Smoked paprika gives the hash a rounded, savoury flavour; hot paprika can be used if you want more heat.
  • Finishing herbs: Fresh parsley adds brightness at the end, while chives make a softer, oniony alternative.

Make-ahead tips

  • Reheating leftovers: Reheat in the air fryer at 190°C (375°F) until piping hot, shaking once to help the potatoes crisp again.
  • Best served fresh: The hash is at its crispest straight from the air fryer, especially if serving with a fried egg.

  1. Cut the potatoes into roughly 1.5 cm dice. Cut the pepper and onion to a similar size, and finely chop the garlic. Roughly chop the parsley.
  2. In a mixing bowl, toss the potatoes, pepper and onion with the olive oil and smoked paprika until well coated. Tip into the air fryer basket in an even layer. Air fry at 200°C (390°F) for 18 minutes, shaking halfway, until the potatoes are golden and nearly tender.
  3. Add the garlic and lay the streaky bacon over the top (or tuck it around the edges). Air fry at 200°C (390°F) for 8 to 10 minutes, turning the bacon once, until crisp and the potatoes are deeply golden. If your air fryer runs hot, drop the temperature slightly to stop the garlic from colouring too quickly.
  4. Transfer everything to a bowl, then break or chop the bacon into bite-size pieces and toss through. Stir through the parsley and serve straight away. If you like, top with a fried egg.
