Lau Thai (Vietnamese Hot Pot)
Why this recipe works
- Aromatic broth base: Lemongrass, garlic, onion, tomato and pineapple simmer together to create a broth that is fragrant, savoury and lightly fruity.
- Bright but savoury: Lime, tomato and pineapple bring the sharpness associated with Lẩu Thái, while fish sauce keeps the broth rounded and deeply seasoned.
- Built for sharing: The pot stays gently simmering so seafood, mushrooms and noodles can be served in stages, making the meal flexible at the table.

Adjust the heat
- For a gentler broth: Add only a small amount of chilli to the pot and serve the rest at the table so each person can adjust their own bowl.
- For more heat: Simmer more of the sliced chilli in the broth from the start so the heat infuses rather than sitting only on the surface.
- Keep the heat balanced: If the broth tastes too sharp or fiery, add seasoning gradually and use lime at the end so the acidity stays fresh rather than harsh.
Timing notes
- Prep drives the workflow: Most of the active work is slicing aromatics, seafood and vegetables; once the broth is simmering, the final cooking is quick.
- Best served while simmering: Keep the broth at a gentle simmer during serving so seafood cooks through quickly without toughening.
- Seafood is best fresh: The broth can hold well, but prawns and squid have the best texture when cooked shortly before serving.
Ingredient notes
- Bruise the lemongrass: Bashing the stalks before simmering helps release their aromatic oils into the broth.
- Taste before adding all the lime: Tomato and pineapple already bring tang, so add lime juice gradually at the end until the broth tastes bright but balanced.
- Cut quick-cooking ingredients evenly: Keep mushrooms, squid and prawns in bite-size pieces so they cook at a similar pace in the hot broth.
Make-ahead tips
- Make the broth base ahead: The aromatic broth can be prepared in advance, then brought back to a steady simmer before adding fish sauce, lime and seafood.
- Keep noodles separate: Store the rice vermicelli apart from the broth so it does not swell or become soft before serving.
- Reheat gently: Bring the broth back to a simmer first, then warm the seafood briefly in the hot liquid to avoid overcooking it.

Instructions
- Prepare the hot pot ingredients: peel and slice the onion, slice the garlic, and bruise the lemongrass by bashing it lightly, then cut into short lengths. Cut the tomatoes into wedges, cut the pineapple into bite-size pieces, and thinly slice the red chilli. Cut the limes in half, then pick the coriander leaves and tender stems.
- Bring a stockpot of water to a simmer, then add the onion, garlic, lemongrass, tomatoes and pineapple. Simmer gently for 20 minutes so the broth turns fragrant and lightly tangy. Keep it at a low simmer while you prepare the seafood and noodles.
- Rinse the prawns and pat dry; if they are shell-on, peel them now. Slice the squid into rings or bite-size pieces. Slice or tear the mushrooms into bite-size pieces so they cook quickly at the table.
- Cook the rice vermicelli in a saucepan of simmering water until tender, following the packet timing. Drain in a colander and rinse briefly under cold water to stop it sticking. Set aside for serving.
- Move the broth to the table in the stockpot (or keep it on the hob over a gentle simmer) and stir in the fish sauce. Squeeze in the juice of 1 lime, then taste and add more lime juice if you want it sharper. Add half the sliced chilli now for a steady heat, keeping the rest for people to add to taste.
- Add the mushrooms to the simmering broth and cook for 2 minutes. Add the squid and cook for 1 to 2 minutes until just opaque. Add the prawns and cook for 2 to 3 minutes until pink and cooked through.
- Ladle the broth, seafood and vegetables into bowls over the rice vermicelli. Finish each bowl with fresh coriander and extra chilli, and serve with the remaining lime halves for squeezing at the table. Keep the pot gently simmering so everyone can top up as they eat.
Recipe notes
Tips
- For the best lemongrass flavour, bruise the stalks well before simmering so they release their oils.
- Do not overcook the squid; add it before the prawns and keep it to a brief simmer so it stays tender.
- If serving anyone who is pregnant, elderly, very young, or immunocompromised, make sure the prawns and squid are cooked until piping hot throughout.
Substitutions
- Replace half the prawns with extra squid for a more squid-forward hot pot.
- Replace the mushrooms with oyster mushrooms for a softer, silkier texture.
- Replace fresh coriander with fresh mint for a different herbal finish.
Storage
- Refrigerate up to 2 days
- Cool the broth and seafood quickly, then refrigerate in a sealed container. Reheat the broth to a steady simmer until piping hot, then warm the seafood briefly in the hot broth to avoid overcooking; store the rice vermicelli separately and refresh with boiling water before serving.
