Veracruz-Style Seafood Cazuela (Tomato Broth with Olives and Capers)
Why this recipe works
- Bright, balanced broth: Tomatoes, lime, capers and olives bring acidity and salinity that keep the seafood stew fresh rather than heavy.
- Fast seafood cooking: The broth is built first, then the fish and prawns are added at the end so they cook quickly and stay tender.
- Simple layered flavour: Softened onion, garlic, oregano and jalapeño create a savoury base before the briny ingredients are stirred in.

Adjust the heat
- Make it gentler: Remove the jalapeño seeds and white pith, or use less chilli, for a softer background warmth.
- Add more heat: Keep the jalapeño seeds in or add extra sliced chilli if you prefer a more assertive broth.
Ingredient notes
- Choose firm white fish: Use a skinless white fish that holds its shape well in broth, so the pieces remain distinct as they simmer.
- Balance the briny ingredients: Olives and capers vary in saltiness, so taste the broth after adding them before adjusting the final seasoning.
- Finish with citrus: Add the lime off the heat to keep the flavour bright and fresh rather than cooked into the broth.
Texture tips
- Keep prawns tender: Add the prawns only once the fish has started cooking, then remove the pot from the heat as soon as they turn pink and opaque.
- Simmer gently: A gentle simmer helps the fish cook evenly without breaking apart or turning dry.
Make-ahead tips
- Make the broth ahead: The tomato, olive and caper broth can be prepared in advance; add the seafood only when you are ready to serve.
- Store rice separately: Keep leftover rice apart from the cazuela so it does not absorb too much broth in the fridge.
- Reheat gently: Warm leftovers over low heat until piping hot, loosening the broth with a little water if needed and avoiding a hard boil.

Ingredients
Instructions
- Cook the rice in a saucepan of salted boiling water until tender, 10–12 minutes, then drain and cover to keep warm. Meanwhile, finely chop the onion, slice the jalapeno (remove seeds for less heat), and finely chop the garlic. Cut the fish into large bite-sized pieces.
- Heat the olive oil in a large pot over medium heat. Add the onion and a pinch of the salt and cook for 6–8 minutes until softened and lightly golden. Stir in the jalapeno and garlic and cook for 1 minute until fragrant.
- Stir in the oregano, then add the tomatoes along with 400 ml water and bring to a gentle simmer. Cook for 8–10 minutes, stirring occasionally, until the broth tastes rounded and slightly thickened. Season with the remaining salt, then stir in the olives and capers.
- Add the fish to the simmering broth and cook gently for 3 minutes. Add the prawns and cook for 2–4 minutes more, until the fish is opaque and flakes easily and the prawns are pink and just cooked through. Take off the heat, squeeze in the lime juice, then taste and adjust with a little more salt if needed.
- Chop the coriander. Serve the cazuela over the warm rice and finish with coriander on top. Cut any remaining lime into wedges for squeezing at the table.

Serving suggestions
This recipe pairs well with:
Tips
- Keep the broth at a gentle simmer once the seafood goes in; a hard boil can make the fish break up and the prawns turn rubbery.
- For a milder cazuela, remove the jalapeno seeds and white pith before slicing.
- If serving anyone who is pregnant, elderly, or immunocompromised, make sure the fish is piping hot throughout and the prawns are fully cooked.
Substitutions
- Replace the jalapeno pepper with half the amount for gentler heat.
- Replace green pitted olives with black pitted olives for a softer, less sharp olive flavour.
- Replace lime with lemon for a slightly different citrus finish.
Storage
- Refrigerate up to 2 days
- Cool quickly and refrigerate in an airtight container. Reheat gently in a pot over low heat until piping hot, adding a splash of water to loosen the broth; avoid boiling to keep the seafood tender. Store the rice separately if possible.
