Stamppot Boerenkool met Rookworst (Kale and Smoked Sausage Mash)
Why this recipe works
- Classic comfort: Floury potatoes, butter and milk create a soft mash that suits the hearty kale and smoked sausage.
- Tangy balance: Dijon mustard brightens the sausage cooking liquid, cutting through the richness of the mash.
- Straightforward method: The potatoes and kale cook together in one pot, keeping the process simple and easy to manage.

Authenticity notes
- Dutch home-style serving: Stamppot is typically served as a rustic mash rather than a smooth purée, with the vegetables visibly folded through.
- Rookworst pairing: Smoked sausage is the traditional partner for boerenkool stamppot, adding warmth, saltiness and a gentle smoky note.
Ingredient notes
- Choose floury potatoes: Russet or other floury potatoes break down easily and give the mash its soft, creamy texture.
- Remove tough kale stems: Stripping out thick stems before cooking keeps the mash tender and prevents fibrous pieces.
- Use gentle heat for sausage: A fully cooked smoked sausage only needs warming through; a vigorous boil can split the casing.
Texture tips
- For a smoother mash: Mash while the potatoes are still steaming hot, adding the milk and butter before the potato starch firms up.
- Keep the kale tender, not dull: Add the kale after the potatoes have started cooking so it softens without losing all of its colour and texture.
Make-ahead tips
- Store separately: Keep the mash and sausage in separate airtight containers so each reheats evenly.
- Reheat gently: Warm the mash over low heat with a splash of milk, stirring until piping hot; reheat the sausage gently in simmering water.

Instructions
- Peel the potatoes and cut into even chunks. Put them in a large pot, cover with cold water and add 1 tsp of the salt. Bring to the boil, then cook for 10 minutes.
- Strip any tough stems from the kale and roughly tear the leaves. Add the kale to the pot on top of the potatoes, cover with a lid and cook until the potatoes are very tender, 10 to 12 minutes. The kale should be soft and a deep green.
- Meanwhile, warm the smoked sausage gently in a saucepan with enough water to come halfway up the sausage. Cover and simmer for 10 to 12 minutes, turning once, until piping hot throughout. Keep it covered off the heat while you finish the mash.
- Drain the potatoes and kale well, then return them to the hot pot. Add the milk and butter and mash until creamy with small flecks of kale throughout. Season with the remaining 1 tsp salt and the black pepper, tasting and adjusting if needed.
- Make a quick mustard gravy by whisking the Dijon mustard into 150 ml of the hot sausage cooking liquid in the saucepan over low heat. Simmer for 1 to 2 minutes until slightly thickened and glossy, then taste. Slice the sausage and serve alongside the stamppot with the mustard gravy spooned over.
Recipe notes
Tips
- For a smoother mash, warm the milk and butter together before adding, then mash while the potatoes are still steaming hot.
- If your smoked sausage is already fully cooked (common for many types), keep the simmer gentle so the casing does not split.
- If serving anyone who is vulnerable to foodborne illness, make sure the sausage is heated until piping hot throughout.
Substitutions
- Replace Dijon mustard with whole-grain mustard for a milder heat and a coarser texture in the gravy.
- Replace whole milk with cooking cream for a richer mash.
Storage
- Refrigerate up to 2 days
- Cool quickly, then refrigerate the mash and sausage separately in airtight containers. Reheat the mash in a saucepan over low heat with a splash of whole milk, stirring until piping hot; reheat the sausage gently in simmering water.
