Mixiotes de Pollo en Salsa Verde (Steamed Chicken Parcels in Salsa Verde)

In Mexican cooking, mixiotes refer to seasoned meat cooked inside sealed parcels, a method that traps steam and concentrates the sauce around the meat. This version uses bone-in chicken thighs coated in salsa verde made from tomatillos, serrano chilli, garlic, coriander, oregano and lime. As the parcels steam, the chicken stays moist while the tangy green sauce turns savoury and aromatic. Serve the parcels opened at the table with warm tortillas, extra salsa verde and lime for a bright, satisfying dinner with gentle heat and plenty of herbal freshness.

Why this recipe works

  • Parcel steaming: Sealing the chicken with salsa keeps moisture close to the meat and lets the aromatics infuse as it cooks.
  • Bright, balanced sauce: Tomatillos and lime bring acidity that cuts through the richness of chicken thighs.
  • Fresh and savoury depth: Simmered tomatillos, garlic, onion, coriander and oregano create a salsa verde that tastes both fresh and rounded.

Adjust the heat

  • For gentler heat: Remove the serrano seeds before simmering, or use jalapeño for a softer chilli flavour.
  • For more heat: Blend in an extra serrano or leave the seeds intact for a sharper finish.
  • Keep the salsa lively: If the chilli tastes too strong, adjust with a little more lime and salt rather than diluting the sauce.

Timing notes

  • Marinate before steaming: A short marination helps the salsa season the chicken before the parcels are sealed.
  • Open just before serving: Let the parcels rest briefly, then open them at the table or just before plating to keep the chicken juicy.

Authenticity notes

  • About the wrapping: Traditional mixiotes are associated with parcel steaming; this version uses baking paper as a practical kitchen-friendly wrapper.
  • How to serve: Warm tortillas and lime are the natural pairing, turning the tender chicken and salsa into an easy taco-style meal.

Make-ahead tips

  • Make the salsa ahead: The salsa verde can be prepared in advance and kept chilled until you are ready to marinate the chicken.
  • Reheat gently: Warm leftovers covered, with a small splash of water if needed, until piping hot throughout.
  • Freezer-friendly: Cooked chicken and salsa can be frozen, then defrosted overnight in the fridge before reheating.

  1. Rinse the tomatillos well to remove any stickiness. Roughly chop the onion, trim the serrano peppers, and peel the garlic. Pick the coriander leaves and tender stems.
  2. Put the tomatillos, onion, serrano peppers and garlic into a large pot and add 250 ml of the water. Bring to a simmer and cook for 10 to 12 minutes, until the tomatillos turn olive-green and soften.
  3. Tip the contents of the pot into a blender and add the fresh coriander, dried oregano, olive oil, 1 tsp of the fine sea salt, the black pepper, and the juice of 1 lime. Blend until smooth, then taste and adjust with a little more salt or lime juice if needed.
  4. Put the chicken thighs in a mixing bowl and season with the remaining 1 tsp fine sea salt. Pour over about two-thirds of the salsa verde and turn to coat well. Leave to marinate for 30 minutes at room temperature.
  5. Set up a steamer in a large pot and add the remaining 500 ml water, keeping the water level below the steamer. Divide the chicken between 4 squares of baking paper, spooning any marinade over the top, then fold into sealed parcels. Arrange the parcels in the steamer basket in a single layer.
  6. Cover and steam over a steady simmer for 35 to 40 minutes, until the chicken is very tender and the juices run clear. Carefully lift out the parcels with tongs and rest for 5 minutes before opening. Warm the remaining salsa verde gently in a small pan or in the blender jug set over hot water, then spoon over the chicken and finish with wedges of the remaining lime.

Serving suggestions

This recipe pairs well with:

Warm tortillas Lime

Tips

  • For a milder heat, remove the seeds from the serrano pepper before simmering and blending.
  • Keep the steamer at a steady simmer; if it boils dry, top up with a little more water to maintain steam.
  • If serving vulnerable groups, ensure the chicken is cooked until piping hot throughout with no pink at the bone.

Substitutions

  • Replace serrano pepper with jalapeno pepper for a gentler heat.
  • Replace dried oregano with fresh oregano for a brighter herbal note.
  • Replace chicken thighs with chicken breast boneless skinless, but reduce steaming time and check early to avoid drying out.

Storage

  • Refrigerate up to 3 days
  • Cool the chicken and salsa, then refrigerate in an airtight container for up to 3 days. Reheat gently in a covered steamer or in a saucepan with a splash of water until piping hot. Freeze for up to 2 months; defrost overnight in the fridge before reheating.
