Grilled Sea Bass with Fennel and Pastis
Why this recipe works
- Aromatic depth: Fennel, garlic and pastis reinforce each other’s aniseed notes without overwhelming the mild sea bass.
- Fresh finish: Lemon zest and juice cut through the olive oil and pan juices, keeping the dish bright rather than heavy.
- Fast cooking: Thinly sliced fennel softens quickly while the fish grills, making the whole dish suitable for a weeknight dinner.
- Delicate contrast: Lightly charred skin and just-flaking fish sit against soft, glossy fennel for a simple but polished plate.

Ingredient notes
- Choose skin-on fillets: Skin-on sea bass holds together well on the grill and gives a lightly crisp surface when cooked skin-side down first.
- Slice the fennel thinly: Thin slices soften faster and absorb the pastis, lemon and garlic more evenly.
- About pastis: Pastis brings a distinct French aniseed note; use it sparingly in the sauce so it supports the fennel rather than dominating the fish.
Texture tips
- For better skin: Pat the fish dry before oiling and seasoning so the skin chars lightly instead of steaming.
- Keep the fish juicy: Take the sea bass off the grill as soon as the flesh turns opaque and flakes easily while still looking moist at the centre.
Common mistakes
- Moving the fish too soon: Let the skin release naturally from the grill before turning; forcing it can tear the fillet.
- Adding pastis over high heat: Pour the pastis in carefully and move the pan off the heat if it flares, then return it to a simmer once the flames die down.
Serving ideas
- Simple sides: Serve with boiled new potatoes, steamed greens or a crisp salad to keep the plate light.
- Use the pan juices: Spoon all the fennel and lemony pastis juices over the fish just before serving so the fillets stay moist and aromatic.

Ingredients
Instructions
- Trim the fennel, then slice it thinly. Finely grate the garlic, then zest the lemon and squeeze the juice.
- Heat the grill to medium-high. Pat the sea bass dry, rub with 1 tbsp olive oil, then season all over with most of the fine sea salt and the black pepper (if using).
- Grill the sea bass, skin-side down first, for 3 to 5 minutes until the skin releases easily and is lightly charred. Turn and grill for 1 to 3 minutes more, until just opaque and the flesh flakes easily.
- While the fish grills, warm the remaining 1 tbsp olive oil in a large frying pan over medium heat. Add the fennel and a pinch of the remaining fine sea salt, then sauté for 6 to 8 minutes until tender and lightly golden, stirring often.
- Stir in the garlic for 30 seconds until fragrant. Carefully pour in the pastis and let it bubble for 1 minute, then add the water and simmer for 2 minutes to make a glossy pan sauce.
- Take the pan off the heat and stir in the lemon zest and lemon juice. Taste and adjust with the remaining fine sea salt, then spoon the fennel and pan juices over the grilled sea bass to serve.
Recipe notes
Tips
- For neat slices, cut the fennel in half through the root, then slice as thinly as you can so it softens quickly in the pan.
- If the pastis flares when it hits the pan, simply slide the pan off the heat until the flames die down, then continue simmering.
- Fish is best when just cooked: look for flesh that turns opaque and flakes easily, but still looks juicy at the centre.
Substitutions
- Replace Pastis with dry white wine for a less aniseed-forward sauce.
- Replace Lemon with lime for a sharper, more tropical citrus finish.
- Replace Sea bass fillet with sea bream fillet for a similar texture and grilling time.
Storage
- Refrigerate up to 2 days
- Cool, then refrigerate the fish and fennel in an airtight container. Reheat gently in a frying pan over low heat with a splash of water until piping hot, or enjoy cold as a salad-style leftover.
