Pipián Verde (Green Pumpkin Seed Mole with Chicken)
Why this recipe works
- Layered green sauce: Tomatillos, serrano chilli, onion, garlic and coriander create a bright base that balances the richness of the pumpkin seeds.
- Velvety without cream: Toasted pumpkin seeds thicken the sauce naturally, giving the pipián a smooth, substantial texture.
- Toasted seed depth: Lightly toasting the pumpkin seeds before blending brings out their nuttiness and gives the mole a more rounded flavour.

Adjust the heat
- For a gentler sauce: Remove the serrano seeds before cooking, or swap to jalapeño for a softer chilli heat.
- For more heat: Keep the serrano seeds in the sauce, or use a little extra chilli if you prefer a sharper finish.
- Keep the finish bright: Lime added just before serving lifts the green sauce and helps balance the chilli and nuttiness.
Authenticity notes
- Seed-thickened mole: Pipián belongs to the family of Mexican moles that use ground seeds or nuts to give the sauce body and richness.
- Pumpkin seeds are central: The toasted pumpkin seeds are not just a garnish; they define the flavour, colour and texture of the sauce.
- Served simply: Chicken in pipián verde is commonly served with tortillas, rice or lime, letting the sauce remain the focus.
Texture tips
- Blend until very smooth: Give the sauce enough time in the blender so the pumpkin seeds fully break down and the pipián has a polished texture.
- Avoid a gritty sauce: Let the toasted seeds cool briefly before blending and scrape down the blender as needed for an even consistency.
- Use a gentle simmer: Once blended, keep the sauce at a low simmer so it stays velvety rather than dull or separated.
Make-ahead tips
- Make the sauce ahead: The pipián sauce can be prepared in advance, cooled and refrigerated, then gently reheated before adding or serving with the chicken.
- Reheat gently: Warm leftovers over low heat with a splash of chicken stock to loosen the sauce, stirring often until piping hot.
- Freezer-friendly: Cool completely before freezing, then defrost overnight in the fridge and reheat gently to preserve the sauce texture.

Ingredients
Instructions
- Peel and roughly chop the white onion and garlic. Stem the serrano peppers, then slice them (remove the seeds if you want a milder sauce). Rinse the tomatillos well to remove any stickiness, then halve any large ones.
- Heat 1 tbsp vegetable oil in a large pot over medium heat. Add the chicken thighs and brown for 4 to 5 minutes per side until the skin is golden. Transfer to a plate.
- In the same pot, add the remaining 1 tbsp vegetable oil, then add the onion and cook for 5 minutes until softened. Add the garlic and serrano pepper and cook for 1 minute until fragrant. Add the tomatillos and cook for 6 to 8 minutes, stirring, until they soften and start to break down.
- Meanwhile, toast the pumpkin seeds in a dry frying pan over medium heat for 4 to 6 minutes, stirring often, until lightly golden and popping. Tip them onto a plate straight away so they do not scorch. Let them cool for 2 minutes.
- Scrape the tomatillo mixture into a blender. Add the toasted pumpkin seeds, fresh coriander, 500 ml chicken stock and 1 tsp fine sea salt, then blend until very smooth. If needed, blend in short bursts and stop to scrape down the sides.
- Pour the green sauce back into the pot and bring to a gentle simmer over medium-low heat. Nestle the chicken thighs back in, add the remaining 250 ml chicken stock, and simmer gently for 20 to 25 minutes until the chicken is cooked through and tender. Stir occasionally, keeping the heat low so the sauce stays velvety and does not catch.
- Taste the sauce and season with the remaining 1 tsp fine sea salt if needed. Cut the lime into wedges and squeeze over each portion just before serving. Spoon plenty of sauce over the chicken.

Serving suggestions
This recipe pairs well with:
Tips
- For the smoothest pipián, blend the sauce for a full minute, then let it sit for 2 minutes so any bubbles rise before simmering.
- Keep the simmer gentle once the sauce is blended; a hard boil can make pumpkin seed sauces taste slightly bitter and look dull.
- If serving vulnerable groups, make sure the chicken is cooked until piping hot throughout with no pink at the bone.
Substitutions
- Replace Chicken thighs with Chicken breast cutlets; simmer for 10 to 12 minutes, just until cooked through, to keep them juicy.
- Replace Serrano pepper with Jalapeno pepper for a milder heat.
- Replace Fresh coriander with Fresh flat-leaf parsley for a different herbal note.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container for up to 3 days. Reheat gently in a saucepan over low heat with a splash of chicken stock to loosen, stirring often until piping hot. Freeze for up to 2 months; defrost overnight in the fridge before reheating.
