Insalata di Polpo (Octopus Salad with Potatoes and Olives)
Why this recipe works
- Gentle cooking: Keeping the octopus at a bare simmer helps it become tender without turning rubbery.
- Clean, balanced dressing: Lemon juice cuts through the olive oil and brightens the briny olives and capers.
- Well-balanced texture: Tender octopus, waxy potatoes and firm olives give the salad substance without heaviness.

Timing notes
- Serve at room temperature: The dressing tastes clearer and the potatoes feel softer when the salad is not fridge-cold.
- Let the flavours settle: A short rest after dressing allows the potatoes and octopus to absorb the lemon, oil and seasoning.
- Chill if preparing ahead: If refrigerated, bring the salad back towards room temperature before serving and refresh with a little olive oil if needed.
Ingredient notes
- Use waxy potatoes: Waxy varieties hold their shape better after boiling and tossing, giving a cleaner salad texture.
- Choose good olive oil: With such a simple dressing, a fresh extra virgin olive oil makes a noticeable difference.
- Rinse the capers: Rinsing brined capers keeps the salty bite controlled, especially alongside olives.
Texture tips
- Avoid a rolling boil: A hard boil can tighten the octopus; a quiet simmer is better for a tender result.
- Cool before tossing: Let the potatoes cool enough to handle so they stay intact and do not collapse into the dressing.
- Toss gently: Fold the salad rather than stirring hard to keep the potato chunks and octopus pieces distinct.
Serving ideas
- Serve with bread: Crusty bread works well for catching the lemony olive oil dressing.
- Pair with crisp white wine: A dry, citrusy white wine suits the seafood, lemon and briny olives.
- Finish simply: Add the final parsley just before serving for a fresher, greener finish.

Ingredients
Instructions
- Rinse the octopus well, then put it into a large pot and cover with cold water. Bring to a gentle simmer and cook for 45 to 60 minutes, keeping it at a bare simmer, until a knife slides into the thickest part with slight resistance. Turn off the heat and leave the octopus in the cooking liquid for 10 minutes.
- Meanwhile, scrub the potatoes and put them in a separate pot of cold salted water. Bring to the boil and cook for 15 to 20 minutes until tender when pierced. Drain and leave until cool enough to handle.
- Lift the octopus out and leave to cool until just warm, then cut into bite-sized pieces. Peel the potatoes if you like, then cut into bite-sized chunks. Put both into a mixing bowl.
- Finely grate or crush the garlic, then whisk it with the lemon juice, olive oil, fine sea salt, and black pepper. Rinse and drain the capers, then add them to the dressing. Taste and adjust with a little more salt or lemon if needed.
- Add the olives and most of the parsley to the bowl, then pour over the dressing. Toss gently so the potatoes stay intact, then leave at room temperature for 10 minutes for the flavours to settle. Finish with the remaining parsley and serve at room temperature.

Tips

- If you have time, chill the dressed salad for 30 minutes, then bring it back to room temperature before serving for the best flavour.
- If serving anyone who is pregnant, elderly, or immunocompromised, make sure the octopus is cooked until fully tender and piping hot before cooling.
Substitutions
- Replace Green pitted olives with Black kalamata pitted olives for a deeper, fruitier flavour.
- Replace Fresh parsley with Fresh dill for a softer, more aromatic finish.
- Replace Lemon with Lime for a sharper, more tropical citrus note.
Storage

- Cool completely, then refrigerate in a sealed container. Bring back to room temperature for 20 to 30 minutes before serving, and refresh with a small drizzle of Extra virgin olive oil if it looks dry.
