Ratatouille Tart with Goat’s Cheese

Ratatouille tart brings the flavours of the Provençal vegetable dish into a crisp, open pastry bake. Aubergine, courgette, red pepper and tomato are cooked until glossy and concentrated, so the topping stays sweet, savoury and not too wet for the puff pastry base. A raised border gives the tart structure, while crumbled goat’s cheese adds creamy tang against the softened vegetables. Finished with fresh basil, it works well as a warm vegetarian lunch, a light supper with salad, or a sliceable dish for casual entertaining.

Why this recipe works

  • Concentrated vegetable flavour: Cooking the aubergine first builds savoury depth before the courgette, pepper and tomatoes soften into a thick ratatouille-style topping.
  • Crisp pastry base: Pre-baking the scored puff pastry creates a raised border and a set centre, giving the topping a sturdier base.
  • Creamy tang: Goat’s cheese balances the sweetness of the cooked peppers and tomatoes with richness and gentle acidity.

Ingredient notes

  • Choose firm ripe tomatoes: They should be sweet and flavourful but not overly soft, so they cook down without making the topping watery.
  • Use all-butter pastry if possible: It gives the tart a richer flavour and a more delicate, crisp finish than standard puff pastry.
  • Keep the vegetables evenly sized: Similar-sized pieces cook at the same pace and make the finished tart easier to slice cleanly.

Texture tips

  • Cook off excess moisture: The ratatouille mixture should look thick and almost dry in the pan before it goes onto the pastry.
  • Protect the pastry structure: Press down only the centre after the first bake, keeping the puffed border intact so the tart holds its shape.

Timing notes

  • Cool the topping briefly: Letting the vegetable mixture cool before assembly helps stop steam from softening the pastry.
  • Serve warm, not straight from the oven: A short stand after baking lets the cheese settle and makes the tart easier to slice.

Make-ahead tips

  • Cook the vegetables in advance: The ratatouille-style topping can be prepared ahead and chilled, then spooned onto the pastry just before baking.
  • Keep components separate: For the crispest result, avoid assembling the tart until you are ready for the final bake.
  • Reheat on a tray: Warm leftovers on a baking tray at 180°C (355°F) until piping hot and the pastry has crisped again.

  1. Heat the oven to 200°C (390°F). Cut the aubergine and courgette into 1 cm pieces, and cut the red pepper into similar-sized pieces. Cut the tomatoes into 1 cm pieces and set aside.
  2. Warm the olive oil in a large frying pan over a medium-high heat. Add the aubergine with a pinch of the salt and cook for 6 to 8 minutes, stirring, until lightly browned and starting to soften. Add the courgette and red pepper and cook for 6 to 8 minutes until softened and glossy.
  3. Add the garlic and cook for 30 seconds until fragrant. Stir in the tomatoes, remaining salt and the black pepper, then reduce to a medium heat and cook for 8 to 10 minutes until the mixture is thick and most of the liquid has cooked off. Take off the heat and leave to cool for 10 minutes so the pastry stays crisp.
  4. Unroll the puff pastry onto a baking tray. Score a 2 cm border around the edge (do not cut all the way through), then prick the centre all over with a fork. Bake for 12 minutes until the border is puffed and the centre looks set.
  5. Use the back of a spoon to gently press down the centre of the pastry, keeping the raised border intact. Spoon the ratatouille mixture evenly over the centre. Crumble the goat cheese over the top and bake for 15 to 18 minutes until the pastry is deep golden and the cheese is lightly coloured.
  6. Tear the fresh basil over the tart and leave it to stand for 5 minutes before slicing. Serve warm.

Recipe notes

Tips

  • Cook the vegetables until the pan looks almost dry before topping the pastry; too much moisture will soften the base.
  • If the pastry centre puffs up during the first bake, press it down gently while it is still hot so it forms a neat well for the topping.

Substitutions

  • Replace goat cheese with feta cheese for a saltier, firmer finish.
  • Replace fresh basil with fresh thyme for a more earthy, savoury flavour.

Storage

  • Refrigerate up to 3 days
  • Cool completely, then refrigerate in an airtight container. Reheat on a baking tray at 180°C (355°F) for 10 to 12 minutes until piping hot and the pastry is crisp again.
