Braised Aubergine with Garlic Sauce
Why this recipe works
- Layered savoury flavour: Garlic, ginger and spring onion build an aromatic base, while soy sauce, black vinegar and sugar create a balanced savoury-tangy sauce.
- Soft, glossy aubergine: Browning first adds flavour, then gentle braising lets the aubergine become tender without falling apart.
- Efficient one-pan method: The aubergine, aromatics and sauce cook in the same wok or frying pan, keeping the workflow simple and the washing-up minimal.

Texture tips
- Cook until fully softened: Aubergine should be very tender before the slurry goes in; once the sauce thickens, it is harder to soften the pieces further without the sauce reducing too much.
- Brown before braising: Let the aubergine take on a little colour in the pan before adding the sauce. This gives a better texture and prevents a flat, watery finish.
Ingredient notes
- Choose firm aubergines: Firm aubergines with glossy skins tend to hold their shape better during braising and give a cleaner, less spongy texture.
- Black vinegar brings depth: Chinese black vinegar gives a mellow, savoury tang. Rice vinegar can be used for a lighter, sharper result.
- Stir the slurry again: Cornflour settles quickly, so stir the slurry just before adding it to keep the sauce smooth and evenly thickened.
Make-ahead tips
- Good for short-term meal prep: The finished dish keeps well in the fridge for a few days and reheats gently with a splash of water to loosen the sauce.
- Best texture on the day: The aubergine is at its glossiest and most defined shortly after cooking; leftovers will be softer but still flavourful.

Ingredients
Instructions
- Cut the aubergine into chunky batons. Thinly slice the spring onions, keeping the white and green parts separate. Finely slice the garlic and ginger.
- In a small bowl, stir together the light soy sauce, Chinese black vinegar, light brown sugar and 150 ml water. In a second small bowl, mix the cornflour with 50 ml water to make a smooth slurry. Set both aside.
- Heat the vegetable oil in a wok or large frying pan over medium-high heat. Add the aubergine and cook for 6 to 8 minutes, turning often, until lightly browned in places. If the pan looks dry, add a splash of water to help it along.
- Add the garlic, ginger and the white parts of the spring onions, and cook for 30 to 60 seconds until fragrant. Pour in the soy and vinegar mixture, bring to a gentle simmer, then cover and braise for 8 to 10 minutes until the aubergine is very tender. Uncover and simmer for 1 minute to reduce slightly.
- Stir the cornflour slurry again, then pour it in while stirring. Cook for 1 to 2 minutes until the sauce turns glossy and clings to the aubergine. Take off the heat and scatter over the green parts of the spring onions and the sesame seeds.

Serving suggestions
This recipe pairs well with:
Tips
- Keep the heat at a gentle simmer during the braise so the aubergine softens without the sauce reducing too quickly.
- Stir the cornflour slurry just before adding, as it settles fast and can thicken unevenly if poured in from the bottom.
- For a cleaner finish, add the green parts of the spring onion right at the end so they stay bright and fresh.
Substitutions
- Replace Chinese black vinegar with rice vinegar for a lighter, sharper tang.
- Replace light brown sugar with honey for a rounder sweetness (note this makes the dish non-vegan).
- Replace sesame seeds with roasted sunflower seeds for a similar crunch without sesame.
Storage
- Refrigerate up to 3 days
- Cool, then refrigerate in a sealed container. Reheat gently in a saucepan with a splash of water, stirring until piping hot; the sauce may loosen slightly on reheating.
