Boeuf Bourguignon (Beef Stew Braised in Red Wine)
Why this recipe works
- Deep savoury base: Rendered pancetta, browned beef, tomato purée, wine and stock build a sauce with depth before the long simmer begins.
- Slow braising: Gentle cooking gives the beef time to become tender while the wine-based sauce reduces into a glossy gravy.
- Improves with resting: The stew keeps well and is especially practical for preparing ahead, as the flavours continue to settle after cooking.

Timing notes
- Plan for slow cooking: Most of the time is hands-off simmering, but the early browning and deglazing steps are important for flavour.
- Serve when the sauce has body: The stew is ready when the beef is very tender and the sauce coats the back of a spoon rather than running thinly.
Common mistakes
- Do not crowd the beef: Brown the meat in batches so it sears properly; overcrowding makes it steam and weakens the flavour of the sauce.
- Avoid a hard boil: Keep the stew at a gentle simmer so the beef softens gradually and the sauce stays smooth.
- Finish the sauce uncovered: If the gravy is too loose at the end, simmer it uncovered briefly until it looks glossy and coats the spoon.
Ingredient notes
- Choose a dry red wine: A dry red wine gives the stew structure and savoury depth without making the sauce taste sweet.
- Add mushrooms late: Cooking the mushrooms separately before adding them near the end helps them keep their shape and prevents them from watering down the stew.
- Use thick-cut carrots: Larger carrot pieces hold up better during the long braise and add sweetness without disappearing into the sauce.
Make-ahead tips
- Excellent the next day: Boeuf bourguignon reheats well, making it a strong make-ahead choice for dinners or entertaining.
- Reheat gently: Warm it slowly on the hob and add a splash of stock if the sauce has thickened too much.
- Freezes well: Cool completely before freezing, then defrost overnight in the fridge before reheating.

Instructions
- Heat the olive oil in a large casserole over medium heat. Add the pancetta and cook for 6 to 8 minutes, stirring, until the fat has rendered and the pieces are lightly golden. Lift out the pancetta, leaving the fat in the pot.
- Pat the beef dry, then add it to the pot in batches so it browns rather than steams. Sear for 3 to 4 minutes per side until well coloured, then transfer to a plate. Sprinkle the flour over the browned beef and toss to coat.
- Cut the carrots into thick slices and finely chop the garlic. Add the carrots to the pot and cook for 3 to 4 minutes, scraping up any browned bits, then stir in the garlic for 30 seconds. Stir in the tomato purée and cook for 1 minute until it darkens slightly.
- Pour in the red wine and bring to a steady simmer, stirring to dissolve the flour. Add the beef stock, thyme and bay leaves, then return the beef and pancetta to the pot. Bring back to a gentle simmer, cover, and cook on low heat for 1 hour 45 minutes, stirring occasionally, until the beef is very tender.
- Meanwhile, peel the pearl onions and halve any large mushrooms. In a frying pan over medium-high heat, cook the onions in a splash of the stew liquid for 6 to 8 minutes until lightly browned and just tender, then add the mushrooms and cook for 5 to 7 minutes until they give up their moisture and start to colour. Tip the onions and mushrooms into the stew for the final 10 minutes of cooking.
- Remove the thyme sprigs and bay leaves. Simmer uncovered for 5 to 10 minutes to thicken the sauce to a glossy gravy that coats the back of a spoon. Taste and adjust seasoning if needed, then serve hot.

Serving suggestions
This recipe pairs well with:
Tips
- For the best colour and flavour, brown the beef in small batches and let each piece sit undisturbed until it releases easily from the pot.
- Keep the stew at a gentle simmer rather than a rapid boil so the beef becomes meltingly tender and the sauce stays glossy.
Substitutions
- Replace Cremini mushrooms with button mushrooms for a milder flavour.
- Replace Dry Red Wine with dry white wine for a lighter, less robust sauce.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container for up to 3 days. Reheat gently on the hob over low heat until piping hot, adding a splash of beef stock if the sauce has thickened too much. Freeze for up to 3 months; defrost overnight in the fridge before reheating.
