Danish Æbleflæsk (Pork Belly with Caramelised Apples and Onion)
Why this recipe works
- Crisp pork, soft fruit: Rendering the pork belly first creates crisp edges while leaving enough fat to cook the apples and onion.
- Sweet-savoury balance: Tart-sweet apples cut through the richness of the pork and keep the dish from feeling heavy.
- Simple pan method: Cooking everything in the same frying pan builds flavour without needing a separate sauce or stock.

Ingredient notes
- Choose firm apples: A firm, tart-sweet apple holds its shape better in the pan and gives the dish the right sweet-sharp contrast.
- Use fatty pork belly: The rendered fat is part of the cooking medium, so leaner pork will give a drier result and less flavour for the apples.
Texture tips
- Keep the pork uncovered: Once fried, spread the pork out rather than piling it up so steam does not soften the crisp edges.
- Protect the apples: Turn the apple slices gently and keep the heat moderate so they caramelise in places without breaking down completely.
Authenticity notes
- Danish comfort cooking: Æbleflæsk is a straightforward Danish dish built around pork, apples, and onion rather than a heavy sauce.
- Fruit variations: Pears can be used for a softer, more honeyed version, though apples give the classic sweet-sharp balance.
Make-ahead tips
- Best served straight away: The pork is crispest just after frying, before it has time to absorb moisture from the apples and onion.
- Reheat gently: Warm leftovers in a frying pan over low heat until piping hot, adding a little water if the apples and onion need loosening.

Ingredients
Instructions
- Cut the pork belly into strips about 2 cm wide. Peel and thinly slice the onion. Core the apples and cut into thick slices.
- Set a large frying pan over medium heat and add the pork belly in a single layer. Fry for 12 to 15 minutes, turning often, until deeply golden and crisp and plenty of fat has rendered. Transfer the pork to a plate, leaving the fat in the pan.
- Add the onion to the pan and cook over medium-low heat for 6 to 8 minutes until soft and lightly golden. Add the apples and cook for 6 to 8 minutes, turning gently, until the apples are soft at the edges and caramelised in places. If the pan looks dry, lower the heat and keep the apples moving so they colour without burning.
- Season the apples and onions with the fine sea salt and black pepper. Strip the thyme leaves from the sprigs and stir most through, reserving a little to finish. Return the pork to the pan for 1 to 2 minutes to warm through, then serve straight away with the remaining thyme scattered over the top.
Recipe notes
Tips
- Keep the heat at medium-low once the apples go in; they caramelise best slowly in the pork fat without collapsing.
- For the crispest pork, spread it on a plate rather than piling it up while the apples cook, so steam does not soften the crackling.
- If serving anyone who is vulnerable, cook the pork belly until piping hot throughout and the fat is fully rendered.
Substitutions
- Replace Fresh thyme with Fresh rosemary for a more resinous, wintry finish.
- Replace Apple with Pear for a softer, more honeyed caramelised fruit.
Storage
- Refrigerate up to 2 days
- Cool, then refrigerate in an airtight container. Reheat gently in a frying pan over low heat until piping hot, adding a splash of water if needed to loosen the apples and onions; the pork will soften slightly on reheating.
