Air Fryer Eggplant
Why this recipe works
- Fast cooking: Small aubergine chunks cook quickly in the air fryer, giving a tender centre without a long roasting time.
- Crisped edges: A light coating of oil helps the cut surfaces darken and crisp while the inside stays soft.
- Simple, bold seasoning: Smoked paprika, garlic and oregano add savoury depth, while lemon keeps the finished dish bright.

Texture tips
- Avoid steaming the aubergine: Keep the pieces in as even a layer as possible so hot air can circulate around them. If the basket is crowded, cook in batches.
- For darker edges: Shake the basket halfway through cooking and give any pale pieces more direct contact with the hot airflow.
Ingredient notes
- Choose firm aubergines: Firm, glossy aubergines hold their shape better and are less likely to turn watery during cooking.
- Finish with lemon to taste: Add the lemon after cooking so the acidity stays fresh and balances the smoky seasoning.
Serving ideas
- Serve as a side: Pair with rice, couscous, lentils, grilled chicken, fish or flatbreads for an easy vegetable addition.
- Add a sauce: Tahini sauce, yoghurt with herbs, or a simple tomato relish work well with the smoky aubergine.
- Finish fresh: Parsley, mint or extra lemon zest can add freshness just before serving.
Make-ahead tips
- Best served hot: The aubergine has the best contrast of soft centre and crisped edges straight from the air fryer.
- Reheat to revive the edges: Reheat refrigerated leftovers in the air fryer at 190°C (375°F) until piping hot and the edges begin to crisp again.

Instructions
- Heat the air fryer to 200°C (390°F). Cut the aubergines into 2 cm chunks and put them in a mixing bowl.
- Finely grate the garlic into the bowl, then add the olive oil, smoked paprika, dried oregano, fine sea salt and black pepper. Toss thoroughly until every piece is evenly coated.
- Tip the aubergine into the air fryer basket in a single layer if you can. Air fry for 14–16 minutes, shaking the basket halfway through, until tender in the middle with darkened, crisped edges.
- Squeeze over the lemon, toss once more, and serve straight away while hot. Taste and add a little more fine sea salt and black pepper if needed.
Recipe notes
Tips
- For the best texture, avoid overcrowding the basket; cook in batches if needed so the aubergine roasts rather than steams.
- If the aubergine looks dry partway through cooking, drizzle over a little more olive oil and shake the basket to re-coat.
Substitutions
- Replace smoked paprika with sweet paprika for a less smoky flavour.
- Replace dried oregano with fresh oregano for a brighter herb note.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container. Reheat in the air fryer at 190°C (375°F) for 4–6 minutes until piping hot and the edges re-crisp.
