Palak Paneer (Spinach and Paneer Curry)
Why this recipe works
- Bright spinach base: Brief blanching followed by rapid cooling helps preserve the spinach’s vivid green colour before blending.
- Layered aromatics: Slowly softened onion, ginger, garlic, chilli and cumin build a savoury base before the spinach purée is added.
- Rich, smooth finish: Paneer adds gentle chew, while butter stirred in off the heat gives the curry a glossy, rounded texture.

Adjust the heat
- For a milder curry: Use less green chilli, or leave it out and rely on garam masala for warmth rather than direct heat.
- For more heat: Add extra green chilli with the ginger and garlic so it has time to mellow into the sauce.
Ingredient notes
- Choose firm paneer: A firm block holds its shape best when cubed and warmed through in the sauce.
- Squeeze the spinach well: Removing excess water after blanching keeps the purée concentrated rather than thin and diluted.
- Add lemon to taste: A little lemon at the end sharpens the spinach and balances the richness of the ghee and butter.
Texture tips
- For a smoother sauce: Blend the spinach thoroughly, adding only a small splash of water if the blender needs help moving.
- Keep the paneer tender: Simmer the paneer only briefly so it warms through without becoming firm or rubbery.
Make-ahead tips
- Make ahead: The curry can be cooked in advance, cooled completely and refrigerated in a sealed container.
- Reheat gently: Warm slowly in a saucepan with a splash of water, stirring often, until piping hot throughout.
- Freezing: Freeze for longer storage, then defrost overnight in the fridge before reheating gently.

Ingredients
Instructions
- Bring a large pot of water to the boil. Add the spinach and blanch for 45 to 60 seconds until just wilted and bright green, then drain in a colander and rinse under cold water to stop the cooking.
- Squeeze the spinach well to remove excess water, then blend to a smooth purée with a small splash of water if needed. Set aside.
- Cut the paneer into bite-size cubes. Thinly slice the onion, then finely grate the ginger and crush the garlic; finely chop the green chilli.
- Heat the ghee in a large frying pan over medium heat. Add the onion with a pinch of the salt and cook for 10 to 12 minutes, stirring often, until soft and golden.
- Stir in the ginger, garlic and green chilli and cook for 1 minute until fragrant. Add the ground cumin and cook for 30 seconds, stirring constantly so the spices toast without burning.
- Add the spinach purée and the remaining salt, then bring to a gentle simmer. Cook for 6 to 8 minutes, stirring regularly, until the sauce looks glossy and slightly thickened.
- Add the paneer and simmer gently for 3 to 4 minutes, just to warm it through. Stir in the garam masala and the unsalted butter, then take off the heat and squeeze in lemon juice to taste.

Serving suggestions
This recipe pairs well with:
Tips
- For the brightest green colour, keep the spinach blanch brief and cool it quickly under cold water before blending.
- Keep the simmer gentle once the spinach purée is in the pan; a hard boil can dull the colour and make the sauce taste slightly bitter.
- If serving vulnerable groups, ensure the paneer is heated until piping hot throughout.
Substitutions
- Replace ghee with unsalted butter for a slightly sweeter, dairy-forward finish.
- Replace green chili pepper with a smaller amount of garam masala for warmth without as much heat.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container for up to 3 days. Reheat gently in a saucepan over low heat with a splash of water, stirring often, until piping hot; freeze for up to 2 months and defrost overnight in the fridge before reheating.
