Sopa de Fideos Seco with Chorizo (Toasted Vermicelli in Tomato Broth)
Why this recipe works
- Flavour built in stages: Browning the chorizo first leaves spiced fat in the pan, which seasons the onion, garlic and vermicelli from the start.
- Toasted noodles: Toasting the vermicelli before simmering gives the dish its recognisable nutty flavour and helps the noodles hold their shape.
- Bright finish: Fresh lime added at the end lifts the tomato and chorizo, keeping the final dish savoury rather than heavy.

Ingredient notes
- Use fresh chorizo if possible: Fresh chorizo renders into the pan and seasons the noodles as they toast. If using cured chorizo, slice it and brown it well so it releases enough flavour.
- Choose ripe tomatoes: Ripe tomatoes break down more easily and give the broth better body and natural sweetness.
- Break up the vermicelli if needed: Shorter strands are easier to stir and serve, and they toast more evenly in the chorizo fat.
Common mistakes
- Letting the noodles catch: Vermicelli can brown quickly once it starts to toast, so keep it moving and aim for deep golden rather than dark brown.
- Leaving it too soupy: This is a dry-style fideo, so simmer until most of the liquid has absorbed and only a rich coating remains.
- Running out of liquid too early: If the pan dries before the noodles are tender, add a small splash of hot stock and continue simmering gently.
Timing notes
- Serve straight away: The noodles continue absorbing liquid as they sit, so the texture is best soon after cooking.
- Prep before you start: Have the onion, garlic, tomatoes, lime and coriander ready before the chorizo goes into the pan; the cooking moves quickly once the noodles are toasting.
Make-ahead tips
- Prepare the aromatics ahead: The onion, garlic, tomatoes and coriander can be chopped in advance and kept covered in the fridge.
- Reheat with extra moisture: Warm leftovers in a frying pan over medium-low heat with a splash of stock, then finish with fresh lime and coriander.

Ingredients
Instructions
- Finely chop the onion and garlic. Roughly chop the tomatoes. Chop the coriander and cut the lime into wedges.
- Set a large frying pan over medium heat and add the chorizo. Cook for 6 to 8 minutes, breaking it up, until browned and the fat has rendered. Scoop the chorizo out to a bowl, leaving the fat in the pan.
- Add the onion to the pan and cook for 3 to 4 minutes until softened. Stir in the garlic for 30 seconds until fragrant. Add the vermicelli and toast for 4 to 6 minutes, stirring often, until deep golden and coated in the chorizo fat.
- Stir in the tomatoes and cook for 2 to 3 minutes until they start to break down. Pour in the hot chicken stock and bring to a lively simmer. Cook for 8 to 10 minutes, stirring regularly, until the noodles are tender and the liquid is mostly absorbed, leaving a rich, almost-dry sauce.
- Stir the browned chorizo back through and cook for 1 to 2 minutes to heat through. Take off the heat and squeeze over lime to taste. Scatter with coriander and serve straight away with extra lime wedges.
Recipe notes
Tips
- Keep the vermicelli moving as it toasts so it browns evenly without catching; you want a deep golden colour for the best flavour.
- If the pan dries out before the noodles are tender, add a small splash of chicken stock and continue simmering until the noodles are cooked.
- If serving anyone vulnerable, make sure the fresh chorizo is cooked through with no pink remaining before serving.
Substitutions
- Replace Chicken stock with Vegetable broth for a lighter, meat-free base.
- Replace Fresh chorizo with Chorizo sausage if that is what you have; slice it and brown it well, then proceed as written.
Storage
- Refrigerate up to 3 days
- Cool quickly, cover and refrigerate. Reheat in a frying pan over medium-low heat with a splash of chicken stock, stirring until piping hot; finish with fresh lime and coriander.
