Southwest Black Bean Wrap

A Southwest-style black bean wrap brings the flavours of a fresh, casual lunch into a soft tortilla: warm cumin-scented beans and sweetcorn, creamy avocado, crisp romaine and a quick tomato salsa sharpened with lime and coriander. The dish sits comfortably in American Southwest-inspired everyday cooking, where beans, corn, citrus and fresh toppings do much of the work. Lightly toasting the filled wraps gives the tortilla a little colour and helps the filling feel cohesive without making the salad elements heavy. It is practical, vegan, easy to customise and best served straight away while the beans are warm and the lettuce still has crunch.

Why this recipe works

  • Quick to prepare: Canned black beans and corn make the warm filling fast without sacrificing substance.
  • Fresh texture contrast: Creamy avocado, crisp lettuce and juicy salsa balance the soft, savoury bean filling.
  • Bright, balanced flavour: Lime juice and fresh tomato cut through the richness of the avocado and keep the wrap lively.
  • Easy to adapt: The salsa, herbs and crunch can be adjusted to suit what you have without changing the basic method.

Make-ahead tips

  • Keep the fillings separate: Store the bean and corn mixture separately from the salsa and avocado to stop the tortillas softening.
  • Assemble just before eating: Build and toast the wraps shortly before serving for the best contrast between the warm filling and fresh salad.
  • Good for lunch prep: The bean filling can be made ahead and chilled, then rewarmed or used at room temperature before wrapping.

Ingredient swaps

  • For extra crunch: Swap romaine for iceberg lettuce if you want a colder, crisper bite.
  • For a milder herb note: Use flat-leaf parsley instead of coriander if you prefer a softer, less citrusy flavour.
  • For a gluten-free version: Use gluten-free tortillas and check they are flexible enough to roll without cracking.

Texture tips

  • Let the filling settle briefly: Allow the warm bean mixture to cool slightly before wrapping so steam does not soften the tortillas too quickly.
  • Choose the avocado style: Slice firmer ripe avocado for cleaner layers, or mash very ripe avocado with lime so it acts as a creamy base.
  • Toast in a dry pan: A brief dry-pan toast warms the wrap and lightly browns the outside without making it greasy.

  1. Dice the tomato and finely chop the red onion. Roughly chop the coriander, then zest and juice the lime. In a bowl, mix the tomato, half the onion, most of the coriander, a squeeze of lime, and a pinch of the fine sea salt to make a quick salsa.
  2. Drain and rinse the canned black beans and canned corn. Warm a frying pan over a medium heat, then add the beans and corn with the ground cumin, the remaining onion, and 0.5 tsp of the fine sea salt. Cook for 3 to 5 minutes, stirring, until hot and lightly coated in the spices.
  3. Halve the avocado, remove the stone, and slice the flesh. Shred the romaine lettuce. Taste the salsa and add a little more lime juice if you want it sharper.
  4. Lay out the flour tortillas and divide the warm bean mixture between them. Top with the avocado, romaine lettuce, and the tomato salsa, then scatter over the remaining coriander. Roll up tightly, tucking in the sides as you go.
  5. Wipe out the pan if needed, then toast the wraps in the dry pan over a medium heat for 1 to 2 minutes per side until warmed through and lightly browned. Serve straight away with extra lime wedges from the remaining lime juice if you have any left.

Recipe notes

Tips

  • For neater wraps, let the bean mixture cool for 2 minutes before assembling so the tortillas do not steam and soften too much.
  • If your avocado is very ripe, mash it lightly with a little lime juice and a pinch of fine sea salt, then spread it on the tortillas as a base layer.

Substitutions

  • Replace romaine lettuce with iceberg lettuce for extra crunch.
  • Replace fresh coriander with fresh flat-leaf parsley for a milder, less citrusy herb note.

Storage

  • Refrigerate up to 1 days
  • For best texture, store the bean and corn filling and the salsa separately in the fridge, then assemble just before eating. If already assembled, keep chilled and eat within 24 hours; the tortillas will soften and the avocado may darken.
