Chimichurri Steak Bowl with Rice, Tomato and Avocado

A chimichurri steak bowl brings the bold, herb-led character of South American-style grilled beef into an easy rice-based lunch. The dish centres on seared rump steak, sliced against the grain and served with a raw parsley, oregano, garlic, olive oil and red wine vinegar sauce that is sharp, grassy and deliberately punchy. White rice makes a simple base, while ripe tomato and firm avocado add freshness, softness and colour. It works well because the garlicky acidity of the chimichurri cuts through the richness of the beef, keeping the bowl bright rather than heavy.

Why this recipe works

  • Sharp, fresh balance: Red wine vinegar and parsley cut through the richness of the seared beef, keeping the bowl bright rather than heavy.
  • Good contrast in every bowl: Fluffy rice, juicy tomato, creamy avocado and sliced steak create a balanced mix of soft, fresh and savoury textures.
  • Efficient timing: The chimichurri and steak can be prepared while the rice cooks and rests, keeping the workflow compact.

Adjust the heat

  • For less heat: Reduce or omit the chilli flakes; the chimichurri will still taste bold from the garlic, vinegar and herbs.
  • For more heat: Add extra chilli flakes gradually to the chimichurri, tasting as you go so the heat does not overpower the herbs.
  • Keep it balanced: If increasing the chilli, adjust with a little more vinegar or salt if needed to keep the sauce lively and rounded.

Ingredient notes

  • Choose ripe but firm avocado: A firm-ripe avocado slices cleanly and holds its shape against the warm rice and steak.
  • Fresh parsley matters: Fresh flat-leaf parsley gives chimichurri its clean, grassy character; dried oregano adds a more savoury background note.
  • Adjust the sharpness: For a brighter chimichurri, add a little more red wine vinegar and rebalance with salt to taste.

Common mistakes

  • Avoid tough steak: Rump steak can toughen if cooked too long; sear it well, rest it, then slice against the grain for a better texture.
  • Use enough heat for browning: A properly hot frying pan helps the steak brown quickly before the centre overcooks.
  • Do not dress too early: Spoon the chimichurri over the bowl just before serving so the rice and avocado stay distinct rather than oily.

Make-ahead tips

  • Keep the parts separate: Store the rice, steak and chimichurri in separate airtight containers, and slice the tomato and avocado close to serving.
  • Reheat gently: Warm the rice and steak gently with a splash of water until piping hot, then add the chimichurri and fresh toppings afterwards.
  • Best for short meal prep: The cooked components keep well for a couple of days, but the avocado is best added fresh to avoid browning.

  1. Rinse the rice briefly, then tip into a saucepan with 300 ml water and 0.5 tsp of the fine sea salt. Bring to the boil, cover, then cook on the lowest heat for 12 minutes. Take off the heat and leave, covered, for 10 minutes.
  2. Meanwhile, finely chop the parsley and finely chop or crush the garlic. In a mixing bowl, stir together the parsley, garlic, dried oregano, chili flakes, red wine vinegar, 4 tbsp of the extra virgin olive oil, 0.5 tsp fine sea salt and 0.25 tsp black pepper. Taste and adjust with a pinch more salt if needed.
  3. Pat the steak dry, then season all over with the remaining 0.5 tsp fine sea salt and the remaining 0.25 tsp black pepper. Heat a frying pan over medium-high heat and add the remaining 1 tbsp olive oil. Sear the steak for 2 to 4 minutes per side (depending on thickness) until well browned, then rest for 5 minutes.
  4. Slice the tomatoes and avocado. Fluff the rice, then divide between two bowls and top with the tomatoes and avocado. Slice the steak against the grain, add to the bowls, and spoon chimichurri over the top.

Recipe notes

Tips

  • For the best texture, let the steak come to room temperature for 15 minutes before cooking, then rest it after searing so the juices settle.
  • If you prefer a sharper chimichurri, add an extra 1 tbsp red wine vinegar and a pinch more fine sea salt to balance.

Substitutions

  • Replace beef rump steak with beef sirloin steak for a slightly more tender result.
  • Replace red wine vinegar with apple-cider-vinegar for a fruitier tang.
  • Replace long-grain white rice with brown-rice for a nuttier, chewier base (allow a longer cooking time).

Storage

  • Refrigerate up to 2 days
  • Store rice, steak and chimichurri separately in airtight containers. Reheat the rice and steak gently in a frying pan with a splash of water until piping hot, and add the chimichurri, tomato and avocado just before serving.
