Spicy Tuna Crunch Poke Bowl

Poke bowls take the Hawaiian idea of seasoned raw fish and serve it in a flexible rice-bowl format, often with crisp vegetables, creamy elements and bold sauces. This version leans into the popular spicy tuna style: cubes of sashimi-grade tuna are coated in a sriracha mayonnaise, then spooned over lightly seasoned sushi rice with cucumber, avocado and spring onion. The warm rice keeps the bowl satisfying, while the cool toppings and fried onion add freshness, creaminess and crunch. It is best assembled just before eating so the tuna stays clean-tasting and the textures remain distinct.

Why this recipe works

  • Strong texture contrast: Soft sushi rice, creamy tuna, crisp cucumber and fried onion give each bowl a clear mix of tender, cool and crunchy elements.
  • Seasoned rice: Rice vinegar, sugar and salt lightly season the rice, helping to balance the richness of the mayonnaise and avocado.
  • Fast assembly: Most of the work is simple slicing and mixing while the rice cooks, making the bowl practical for a quick lunch or light dinner.

Adjust the heat

  • For less heat: Use less sriracha and keep the mixture creamy with a little extra mayonnaise.
  • For more heat: Increase the sriracha gradually, tasting as you go so the tuna stays balanced rather than overwhelmed.

Ingredient notes

  • Choose the tuna carefully: Use tuna labelled as safe to eat raw, from a reliable source, and keep it chilled until just before cutting.
  • Avocado texture matters: A ripe but firm avocado slices cleanly and holds its shape better in the bowl.
  • Seed the cucumber: Removing the watery centre helps the cucumber stay crisp and prevents excess moisture from pooling in the rice.

Timing notes

  • Cool the rice slightly: Let the seasoned rice cool until warm rather than hot before adding the tuna, so the fish stays fresh-tasting and chilled.
  • Serve straight away: Assemble just before eating; the fried onion softens and the avocado can discolour once the bowl sits.

Make-ahead tips

  • Keep components separate: If preparing ahead, refrigerate the rice and spicy tuna in separate airtight containers for up to 1 day.
  • Prep the vegetables selectively: Cucumber and spring onion can be sliced ahead, but cut the avocado at the last minute for the best colour and texture.

  1. Rinse the sushi rice in cold water until the water runs mostly clear. Tip into a saucepan with the water, bring to the boil, then cover and cook on a very low heat for 10 minutes. Take off the heat and rest, covered, for 10 minutes.
  2. Meanwhile, stir together the rice vinegar, caster sugar and fine sea salt until dissolved. Spread the rice in a wide bowl and fold through the vinegar mixture, then let it cool slightly so it is warm rather than hot.
  3. Slice the tuna into small cubes. In a mixing bowl, mix the tuna with the mayonnaise and sriracha until evenly coated.
  4. Halve the cucumber lengthways and scoop out the watery seeds, then slice. Halve, stone and peel the avocado, then slice; finely slice the spring onion.
  5. Divide the rice between two bowls and top with the spicy tuna, cucumber and avocado. Sprinkle over the spring onion and finish with the fried onion for crunch. Serve straight away.

Recipe notes

Tips

  • For best texture, keep the rice warm, not cold, and add the tuna just before serving.
  • If serving to pregnant people, young children, the elderly, or anyone immunocompromised, use tuna that is labelled safe to eat raw or briefly sear the outside and cool before dicing.

Substitutions

  • Replace Rice vinegar with White wine vinegar for a slightly fruitier, less sharp seasoning.
  • Replace Fried onion with Roasted sesame seeds for a lighter crunch.

Storage

  • Refrigerate up to 1 days
  • Best assembled and eaten immediately. If needed, refrigerate the rice and spicy tuna separately in airtight containers for up to 1 day; do not store cut avocado as it will brown. Eat cold from the fridge rather than reheating.
