Spicy Salmon Crunch Poke Bowl

Poke bowls take the idea of seasoned raw fish and turn it into a complete rice bowl, with soft grains, fresh vegetables and punchy toppings in each spoonful. This spicy salmon version leans into a sushi-inspired style: sashimi-grade salmon is coated in creamy mayonnaise and sriracha, then served over lightly vinegared sushi rice with cucumber, avocado and spring onion. The fried onion finish is what makes it especially satisfying, adding crisp texture against the tender fish and cool vegetables. It is best assembled just before eating, when the rice is still gently warm and the toppings are fresh.

Why this recipe works

  • Layered textures: Soft seasoned rice, creamy salmon, crisp cucumber and fried onions give each bowl a clear contrast of tender, fresh and crunchy elements.
  • Balanced richness: Rice vinegar in the sushi rice cuts through the mayonnaise and avocado, keeping the bowl bright rather than heavy.
  • Fast assembly: Once the rice is cooked and rested, the toppings need only slicing and mixing, making this a practical lunch or light dinner.

Adjust the heat

  • For a milder bowl: Reduce the sriracha and lean more on the mayonnaise for a creamier, gentler coating.
  • For more heat: Add extra sriracha gradually until the salmon has the level of chilli heat you want.
  • Keep the heat balanced: Taste the salmon mixture before assembling; the rice, avocado and cucumber will soften the spice once everything is in the bowl.

Ingredient notes

  • Choose salmon carefully: Use salmon labelled suitable for eating raw, and keep it chilled until you are ready to dice and mix it.
  • Use firm-ripe avocado: Avocado should be ripe enough to taste creamy but firm enough to slice cleanly without collapsing into the rice.
  • Seed the cucumber: Removing the watery centre keeps the topping crisp and stops excess moisture from softening the bowl.

Timing notes

  • Serve straight away: Assemble the bowls just before eating so the fried onions stay crisp and the avocado looks fresh.
  • Cool the rice slightly: The rice should be warm rather than hot before topping, so it does not warm the raw salmon.

Make-ahead tips

  • If preparing ahead: Keep the rice and spicy salmon in separate airtight containers, then slice the avocado and assemble just before serving.
  • Best eaten fresh: The bowl is at its best on the day it is made; cut avocado browns and fried onions lose crunch once stored.

  1. Rinse the sushi rice in cold water until the water runs mostly clear. Tip into a saucepan with the water, bring to the boil, then cover and cook on a very low heat for 10 minutes. Take off the heat and rest, covered, for 10 minutes.
  2. Meanwhile, stir together the rice vinegar, caster sugar and fine sea salt until dissolved. Spread the rice in a wide bowl and fold through the vinegar mixture, then let it cool slightly so it is warm rather than hot.
  3. Slice the salmon into small cubes. In a mixing bowl, mix the salmon with the mayonnaise and sriracha until evenly coated.
  4. Halve the cucumber lengthways and scoop out the watery seeds, then slice. Halve, stone and peel the avocado, then slice; finely slice the spring onion.
  5. Divide the rice between two bowls and top with the spicy salmon, cucumber and avocado. Sprinkle over the spring onion and finish with the fried onion for crunch. Serve straight away.

Recipe notes

Tips

  • For clean slices, chill the salmon for 10 minutes, then cut with a sharp knife in long strokes.
  • If serving to pregnant people, young children, the elderly, or anyone immunocompromised, use salmon that is labelled safe to eat raw or briefly sear the outside and cool before dicing.

Substitutions

  • Replace Rice vinegar with White wine vinegar for a slightly fruitier, less sharp seasoning.
  • Replace Fried onion with Roasted sesame seeds for a lighter crunch.

Storage

  • Refrigerate up to 1 days
  • Best assembled and eaten immediately. If needed, refrigerate the rice and spicy salmon separately in airtight containers for up to 1 day; do not store cut avocado as it will brown. Eat cold from the fridge rather than reheating.
