Himmel und Erde (Black Pudding with Fried Apples and Mash)

Named for its pairing of “heaven” and “earth” — apples from the tree and potatoes from the ground — Himmel und Erde is a hearty German plate where creamy mash meets soft, sharp-sweet fruit and rich black pudding. Often served with onions and buttery pan juices, it has the satisfying feel of a simple farmhouse dinner: savoury, gently sweet, and substantial without being fussy. The firm apples keep enough shape to sit comfortably against the mash, while the black pudding is best crisped at the edges for a welcome contrast to the softer elements.

Why this recipe works

  • Strong texture contrast: Creamy mash and soft apples sit alongside black pudding that is crisp at the edges and tender within.
  • Sweetness in balance: Sweet-tart apples and a splash of vinegar cut through the richness of the butter and black pudding.
  • Straightforward technique: The dish relies on simple boiling, mashing and pan-frying, with the apples and pudding cooked in the same pan for an efficient workflow.

Authenticity notes

  • Classic pairing: The dish is defined by the combination of potatoes, apples and blood sausage or black pudding, giving it its recognisable sweet-savoury character.
  • Home-style serving: It is usually served as separate hot components rather than a layered bake, with the buttery pan juices spooned over at the end.

Ingredient notes

  • Choose firm apples: Firm sweet-tart apples work best because they soften in the pan without collapsing into sauce.
  • Milk choice affects richness: Whole milk gives the mash a fuller, rounder texture; lower-fat milk will make it lighter but less luxurious.
  • Cut sturdy pudding slices: Black pudding holds together better in the pan when cut into thick, even rounds before frying.

Texture tips

  • For smoother mash: Let the drained potatoes steam-dry briefly before mashing so they absorb the butter and warm milk more evenly.
  • For crisp-edged black pudding: Keep the pan at a steady medium heat so the slices crisp gradually without splitting or scorching.
  • Keep the apples glossy, not wet: Add the vinegar right at the end so it brightens the apples without turning the pan juices watery.

  1. Peel the potatoes and cut into even chunks. Put them in a large pot, cover with cold water, and add 1 tsp of the fine sea salt. Bring to the boil, then simmer for 15 to 18 minutes until very tender.
  2. While the potatoes cook, halve and peel the onion, then slice it thinly. Core the apples, peel if you like, and cut into 1 cm wedges. Slice the black pudding into 1.5 cm rounds.
  3. Melt half the unsalted butter in a large frying pan over medium heat. Add the onion with a pinch of the remaining salt and cook for 6 to 8 minutes until soft and lightly golden. Stir in the apples and cook for 5 to 7 minutes until tender and glossy, then splash in the apple cider vinegar and cook for 30 seconds.
  4. Push the apples and onions to one side of the pan. Add the black pudding slices in a single layer and cook for 2 to 3 minutes per side until crisp at the edges and heated through. If the pan looks dry, add a small knob of the remaining butter.
  5. Drain the potatoes well, then return them to the hot pot for 1 minute to steam-dry. Warm the whole milk briefly, then mash the potatoes with the remaining butter, warm milk, ground nutmeg, and black pepper. Taste and adjust with the remaining fine sea salt.
  6. Spoon the mash onto plates and top with the soft fried apples and onions. Serve the black pudding alongside, with any buttery pan juices spooned over. Eat straight away while everything is hot.

Recipe notes

Tips

  • For the smoothest mash, drain the potatoes thoroughly and let them steam-dry in the pot before adding the warm milk and butter.
  • Keep the heat at medium when frying the black pudding so it crisps at the edges without splitting or burning.
  • If serving anyone who is pregnant, elderly, or immunocompromised, make sure the black pudding is cooked until piping hot all the way through.

Substitutions

  • Replace Whole milk with low-fat milk for a lighter mash.
  • Replace Apple cider vinegar with white wine vinegar for a similar sharp finish.
  • Replace Unsalted butter with salted butter, then reduce the Fine sea salt to taste.

Storage

  • Refrigerate up to 2 days
  • Cool leftovers quickly and refrigerate in an airtight container. Reheat the mash with a splash of whole milk in a saucepan over low heat, stirring until piping hot; re-crisp the black pudding in a frying pan for 1 to 2 minutes per side, and warm the apples gently so they do not collapse.
