Vegan Chana Masala (Chickpea Curry)
Why this recipe works
- Layered spice base: Cooking the onion until golden, then briefly blooming the garlic, ginger and spices, gives the sauce more depth before the chickpeas are added.
- Bright, balanced finish: Tomato gives the curry body and tang, while lemon added off the heat sharpens the flavours without making the sauce harsh.
- Fast but satisfying: Canned chickpeas keep the cooking time short, and mashing a few into the sauce helps create a thicker, more cohesive gravy.

Adjust the heat
- For less heat: Remove the chilli seeds, use less fresh chilli, or replace it with extra garam masala for warmth without sharp heat.
- For more heat: Keep the chilli seeds in, or add extra fresh chilli when frying the aromatics so the heat spreads through the sauce.
- Keep the heat rounded: Finish with lemon gradually and taste as you go; acidity makes the spices feel brighter and prevents the curry from tasting flat.
Ingredient notes
- Use fresh spices: Ground cumin, coriander and garam masala lose aroma over time, so fresher spices will give a noticeably fuller curry.
- Grate the tomatoes: Grating ripe tomatoes gives pulp and juice for the gravy while leaving most of the skin behind.
- Add lemon to taste: Stir in the lemon after cooking and adjust gradually, especially if the tomatoes are already quite sharp.
Common mistakes
- Do not let the spices catch: Once the ground spices go into the pan, stir constantly and cook them only briefly so they bloom without becoming bitter.
- Avoid a watery sauce: Simmer until the gravy coats the chickpeas; if needed, mash a small spoonful of chickpeas into the sauce to help it thicken.
- Add lemon at the end: Lemon is best stirred in off the heat so its fresh acidity stays clear and lively.
Make-ahead tips
- Good for meal prep: The curry keeps well in the fridge and the chickpeas continue to absorb flavour as they sit.
- Reheat gently: Warm in a saucepan with a splash of water if the sauce has thickened, stirring until piping hot throughout.
- Freezer-friendly: Cool completely before freezing in a sealed container, then defrost in the fridge before reheating.

Ingredients
Instructions
- Finely chop the yellow onion. Slice the green chili pepper (remove the seeds for less heat), then finely chop the garlic and grate the ginger root.
- Heat the vegetable oil in a saucepan over medium heat. Add the onion and cook for 8 to 10 minutes, stirring often, until softened and lightly golden.
- Stir in the green chilli, garlic and ginger and cook for 1 minute until fragrant. Add the ground cumin, ground coriander and garam masala and cook for 30 seconds, stirring so the spices do not catch.
- Add the tomato purée and cook for 1 minute to take off the raw edge. Grate the tomatoes into the pan (discard the skins if you like) and simmer for 5 minutes until the mixture looks glossy and slightly thickened.
- Drain and rinse the chickpeas, then stir them into the sauce with 200 ml water. Simmer for 8 to 10 minutes, stirring occasionally, until thick enough to coat the chickpeas; mash a spoonful against the side of the pan to thicken further if needed.
- Remove from the heat and squeeze in the lemon juice to taste. Rest for 2 minutes, then serve hot.
Recipe notes
Tips
- For a smoother gravy, grate the tomatoes on the coarse side of a grater so you get pulp and juice without large pieces of skin.
- If the curry thickens too much, loosen it with a splash of water and warm gently until piping hot.
- If serving vulnerable groups, make sure the curry is simmered until piping hot throughout before serving.
Substitutions
- Replace the green chili pepper with an extra 1 tsp garam masala for warmth without fresh chilli heat.
- Replace the tomato purée with 1 extra medium tomato for a lighter, fresher tomato base.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container for up to 3 days. Freeze for up to 3 months; defrost overnight in the fridge and reheat gently in a saucepan with a splash of water until piping hot.
