Spiced Chickpea Bowl (Chana Masala with Basmati Rice)
Why this recipe works
- Layered aromatics: Onion, garlic and ginger form a savoury base before the cumin and garam masala are briefly cooked to bring out their warmth.
- Bright finish: Lemon added at the end sharpens the tomato-rich sauce and keeps the chickpeas from tasting heavy.
- Holds well: The chickpea gravy reheats reliably, and freezing the rice and chickpeas separately helps preserve the best texture.

Texture tips
- For a thicker gravy: Lightly crush some of the chickpeas into the sauce, then simmer briefly so the starch helps bind the tomato base.
- For fluffier rice: Leave the cooked rice covered off the heat before fluffing; this allows the grains to finish steaming without turning wet.
Ingredient notes
- Garam masala varies: Different blends can taste sweeter, warmer or more peppery, so adjust the final seasoning and lemon to balance the sauce.
- Use citrus to finish: Add lemon gradually at the end; it should brighten the chickpeas without making the gravy taste sharp.
Make-ahead tips
- Keep rice and chickpeas separate: Store the rice and chickpea gravy in separate containers so the rice does not absorb too much sauce.
- Reheat gently: Warm the chickpeas with a splash of water until piping hot, then loosen the sauce as needed before serving.
- Freeze for later: Both components can be frozen, but the texture is best when the rice and chickpeas are frozen separately.
Serving ideas
- Add something fresh: Serve with cucumber, tomato or a simple chopped salad to contrast the warm, spiced chickpeas.
- Finish with herbs: Fresh coriander is the classic finish here, while mint gives a cooler, greener flavour.

Instructions
- Rinse the basmati rice in cold water until the water runs mostly clear. Tip into a saucepan with 300 ml water and 0.5 tsp of the fine sea salt, bring to the boil, then cover and cook on the lowest heat for 10 minutes. Take off the heat and leave, covered, for 10 minutes.
- Meanwhile, finely chop the yellow onion. Peel and finely grate the ginger root, and finely chop the garlic. Roughly chop the tomatoes.
- Heat the sunflower oil in a large frying pan over a medium heat. Add the onion with a pinch of the remaining salt and cook for 6 to 8 minutes until softened and lightly golden. Stir in the ginger and garlic and cook for 1 minute until fragrant.
- Stir in the ground cumin and garam masala and cook for 30 seconds. Add the tomatoes and 150 ml water, then simmer for 8 to 10 minutes, stirring occasionally, until the tomatoes break down and the sauce thickens. Season with the remaining salt to taste.
- Drain and rinse the canned chickpeas, then stir them into the sauce. Simmer for 5 to 7 minutes until the chickpeas are hot and the gravy is thick and aromatic. If it looks dry, add a splash of water and simmer again.
- Finely chop the fresh coriander. Cut the lemon and squeeze in half the juice, then taste and add more if you like it brighter. Fluff the rice, spoon into bowls, top with the chickpeas, and finish with coriander.
Recipe notes
Tips
- For a thicker, more restaurant-style gravy, lightly crush a spoonful of chickpeas against the side of the pan, then simmer for 1 to 2 minutes.
- If you are serving anyone who is pregnant, elderly, or immunocompromised, make sure the chickpeas and sauce are simmered until piping hot throughout.
Substitutions
- Replace Fresh coriander with Fresh mint for a different, fresher finish.
- Replace Lemon with Lime for a sharper citrus note.
Storage
- Refrigerate up to 3 days
- Cool quickly, then refrigerate in an airtight container. Reheat the chickpeas in a saucepan with a splash of water until piping hot; reheat the rice in the microwave or steam until hot. Freeze the chickpeas and rice separately for the best texture.
