Indian Chickpea Bowl (Spiced Chickpeas with Vegetables)
Why this recipe works
- Built-in spice depth: Cooking the garlic, ginger and ground spices briefly before adding the tomatoes helps release their aroma and gives the chickpea sauce a fuller flavour.
- Complete bowl format: Rice, chickpeas, vegetables and yoghurt create a balanced meal with starch, protein, vegetables and a cooling finish in one serving.
- Good for planned lunches: The chickpea and vegetable mixture keeps well, reheats easily with a splash of water, and can be stored separately from the yoghurt.

Ingredient notes
- Cut the cauliflower small: Small florets cook quickly and evenly, so they become tender without breaking down into the sauce.
- Use fresh garam masala: Garam masala gives the bowl its warm finishing aroma; if it has been open for a long time, the flavour will be noticeably softer.
- Choose yoghurt by texture: Plain yoghurt keeps the finish light, while Greek yoghurt gives a thicker, tangier topping.
Texture tips
- For a thicker sauce: Let the tomato base simmer until slightly reduced before adding the chickpeas and cauliflower.
- Keep the spinach fresh: Add the spinach right at the end and cook only until wilted so it keeps its colour and does not turn mushy.
- For a creamier finish: Stir a little yoghurt into the pan off the heat, then spoon extra yoghurt over the bowls when serving.
Make-ahead tips
- Store the yoghurt separately: Keep the chickpea mixture and yoghurt in separate containers so the topping stays cool and fresh.
- Reheat gently: Warm the chickpeas in a saucepan with a splash of water until piping hot, stirring occasionally to loosen the sauce.
- Freeze the chickpea mixture only: The spiced chickpeas and vegetables can be frozen, but the yoghurt is best added fresh after reheating.
Common mistakes
- Do not scorch the spices: Ground spices need only a short time in the pan; stir constantly and add the tomatoes once they smell fragrant.
- Keep the simmer gentle: A steady, gentle simmer thickens the sauce without drying it out or making it catch on the base of the pan.
- Avoid collapsing the cauliflower: Cook until the florets are tender but still holding their shape, especially if you plan to reheat leftovers.

Ingredients
Instructions
- Rinse the basmati rice until the water runs mostly clear, then cook it in a saucepan of lightly salted water until tender. Drain well in a colander, cover, and set aside to keep warm.
- Meanwhile, finely chop the onion, and finely grate the garlic and ginger. Cut the cauliflower into small florets so they cook quickly and evenly.
- Heat the olive oil in a large frying pan over a medium heat. Add the onion with a pinch of salt and cook for 6 to 8 minutes until softened and lightly golden.
- Stir in the garlic and ginger for 30 seconds, then add the ground cumin, ground turmeric, and most of the garam masala, reserving a pinch for serving. Cook for 30 to 60 seconds, stirring, until fragrant.
- Add the canned chopped tomatoes and water, then bring to a gentle simmer. Simmer for 5 minutes to thicken slightly and let the spices mellow.
- Drain and rinse the chickpeas, then stir them into the sauce. Add the cauliflower, cover, and simmer for 10 to 12 minutes until the cauliflower is tender but still holding its shape.
- Stir in the spinach and cook for 1 to 2 minutes until just wilted. Season with fine sea salt and black pepper, then take off the heat.
- Divide the rice between bowls and spoon over the spiced chickpeas and vegetables. Finish each bowl with a spoon of yogurt and the reserved pinch of garam masala.
Recipe notes
Tips
- Keep the simmer gentle once the tomatoes go in, so the sauce thickens without catching on the base of the pan.
- For a creamier finish, swirl a little of the yogurt into the pan off the heat, then add the rest on top when serving.
Substitutions
- Replace yogurt with greek-yogurt for a thicker, tangier topping.
- Replace cauliflower with broccoli-florets for a similar cooking time and texture.
- Replace spinach with kale; add it with the cauliflower and simmer a few minutes longer until tender.
Storage
- Refrigerate up to 3 days
- Cool the chickpea and vegetable mixture quickly, then refrigerate in a sealed container. Reheat in a saucepan with a splash of water until piping hot; store the yogurt separately and add after reheating. Freeze the chickpea mixture only for up to 2 months, then defrost overnight in the fridge before reheating.
