Kasza Jaglana Bowl (Millet with Roasted Vegetables and Feta)

In Polish cooking, kasza refers to cooked grains or groats, and kasza jaglana brings millet’s mild, nutty character into a practical bowl format. Here the fluffy grains are paired with roasted courgette and red pepper, giving the dish soft sweetness, lightly browned edges and enough substance for lunch. Feta adds a salty, creamy finish, while parsley and a lemon-honey dressing keep the bowl fresh rather than heavy. It works well warm, at room temperature or packed ahead, especially if the dressing is kept separate until serving.

Why this recipe works

  • Good texture contrast: Tender roasted vegetables, fluffy millet and crumbly feta give the bowl structure without feeling heavy.
  • Bright, balanced dressing: Lemon cuts through the richness of the olive oil and feta, while honey softens the acidity.
  • Works for lunch prep: The millet and roasted vegetables hold well in the fridge, especially when the dressing is kept separate until serving.

Ingredient notes

  • Rinse the millet well: Rinsing helps remove any natural bitterness and gives the cooked grains a cleaner, lighter flavour.
  • Choose firm courgette: A firm courgette holds its shape better during roasting and is less likely to become watery.
  • Fresh herbs matter here: Flat-leaf parsley keeps the bowl fresh, while fresh dill is a good alternative for a more distinctly Polish-style finish.

Texture tips

  • Let the millet stand: Keeping the pan covered briefly after cooking allows the grains to finish steaming evenly before fluffing.
  • Steam off excess moisture: If the millet looks damp after cooking, uncover it for a short time before assembling the bowls.
  • Give the vegetables space: Spread the courgette and pepper out on the tray so they roast and brown at the edges rather than steam.

Make-ahead tips

  • Keep the dressing separate: Store the millet and roasted vegetables together, but add the dressing just before eating to keep the flavours fresh.
  • Good for up to 3 days: The cooked millet and vegetables can be refrigerated in an airtight container for up to 3 days.
  • Finish just before serving: Add the feta and herbs at the end so they keep their texture and colour.

  1. Heat the oven to 220°C (430°F). Rinse the millet in a colander under cold water until the water runs clearer.
  2. Cut the courgette into bite-size chunks and the red pepper into similar pieces. Toss the vegetables on a baking tray with 1 tbsp of the extra virgin olive oil, 0.5 tsp of the fine sea salt, and the black pepper.
  3. Roast for 20 to 25 minutes, turning once, until tender and lightly browned at the edges. Set aside while you finish the bowl.
  4. Tip the rinsed millet into a saucepan with 450 ml water and 0.5 tsp of the fine sea salt. Bring to the boil, then cover and cook on the lowest heat for 12 to 15 minutes until the water is absorbed and the grains are tender.
  5. Take the pan off the heat and leave the millet, covered, for 5 minutes, then fluff with a fork. If it seems a little wet, leave it uncovered for 2 minutes to steam off.
  6. Finely chop the fresh parsley. In a mixing bowl, whisk 2 tbsp of the extra virgin olive oil with the juice of the lemon, the honey, and the remaining 0.25 tsp fine sea salt.
  7. Divide the millet between two bowls and top with the roasted courgette and red pepper. Spoon over the dressing, then crumble over the feta cheese and finish with the parsley.
