Latin-Style Quinoa Bowl with Black Beans, Sweetcorn and Avocado
Why this recipe works
- Bright, balanced dressing: Lime juice cuts through the richness of the avocado and lifts the beans, sweetcorn and quinoa.
- Varied texture: Fluffy quinoa, creamy avocado, juicy tomato salsa and tender beans make the bowl feel fresh and substantial.
- Good for prep-ahead lunches: The quinoa, bean mixture, salsa and dressing can be stored separately, then assembled just before serving.

Adjust the heat
- For less heat: Remove the jalapeño seeds and white pith before chopping, or use a smaller amount in the salsa.
- For more heat: Swap the jalapeño for serrano, or add extra chopped chilli to the salsa just before serving.
Make-ahead tips
- Keep the elements separate: Store the quinoa, bean and sweetcorn mixture, salsa and dressing in separate containers so the bowl stays fresh.
- Add avocado last: Slice the avocado just before eating to avoid browning and keep its texture creamy.
- Reheat selectively: Warm the quinoa and bean mixture until piping hot, then add the cold salsa, avocado and dressing.
Ingredient notes
- Rinse the quinoa well: Rinsing helps remove quinoa’s natural coating, which can taste bitter if left on the grains.
- Use ripe avocado: Choose an avocado that yields slightly to gentle pressure so it slices cleanly and gives the bowl a creamy contrast.
- Adjust the lime: Add extra lime juice if the bowl needs more brightness, especially if the avocado is particularly rich.
Serving ideas
- Finish with coriander: Scatter over fresh coriander just before serving for a cleaner, brighter herb note.
- Serve with tortilla chips: Tortilla chips add crunch and work well alongside the salsa, beans and avocado.

Instructions
- Rinse the quinoa in a sieve until the water runs clear. Tip into a saucepan with 400 ml water, bring to the boil, then cover and simmer gently for 12–15 minutes until the water is absorbed and the grains are tender. Take off the heat and leave covered for 5 minutes, then fluff with a fork.
- Meanwhile, drain and rinse the black beans. Put the beans and sweetcorn in a bowl with the ground cumin and finely grated garlic, then toss well. Set aside to let the flavours mingle while you make the salsa and dressing.
- Dice the tomato and finely chop the red onion. Finely chop the jalapeno pepper, removing the seeds if you prefer less heat, then mix it all together for a quick salsa. Squeeze over a little lime juice to brighten it, using the same lime you will dress the bowl with.
- Finely chop most of the fresh coriander, reserving a little to finish. In a small bowl, whisk the remaining lime juice with the extra virgin olive oil and a pinch of salt until lightly emulsified. Taste and adjust with more lime juice if you want it sharper.
- Halve, stone and slice the avocado. Divide the quinoa between two bowls and spoon over the cumin beans and sweetcorn, then add the tomato salsa and avocado. Drizzle with the lime and coriander dressing and scatter over the reserved coriander; serve warm or at room temperature.

Tips
- For the best texture, rinse the quinoa well and let it sit covered off the heat before fluffing, which helps the grains separate.
- If you are sensitive to chilli heat, remove the jalapeno seeds and white pith before chopping.
- For packed lunches, keep the avocado and dressing separate and add just before eating to keep everything fresh.
Substitutions
- Replace fresh coriander with fresh flat-leaf parsley for a different herb note.
- Replace jalapeno pepper with serrano pepper for a hotter salsa.
- Replace extra virgin olive oil with avocado oil for a milder dressing.
Storage
- Refrigerate up to 2 days
- Store the quinoa, beans and sweetcorn, salsa, and dressing in separate airtight containers in the fridge. Add the avocado just before serving; if already mixed, press the avocado against the surface and chill promptly. To reheat, warm the quinoa and bean mixture in the microwave until piping hot, then top with the cold salsa and dressing.
