Himmel und Erde (Mashed Potatoes with Apples and Sausage)

Himmel und Erde, literally “heaven and earth”, is a traditional German comfort dish that pairs fruit from the tree with potatoes from the ground. At its heart are creamy mashed potatoes, softly cooked apples and sweet caramelised onions, usually served with browned sausage or another savoury pork element. The pleasure of the dish comes from its gentle mix of textures and flavours: buttery mash, tender tart-sweet apple, deeply golden onions and crisp-edged sausage. It is straightforward enough for a weeknight dinner, but still distinctive, with the sweet-savoury character that makes many central European potato dishes so satisfying.

Why this recipe works

  • Classic comfort balance: Creamy potatoes, sweet apples and browned sausage create the familiar sweet-savoury contrast that defines the dish.
  • Sweetness with depth: Slow-cooked onions add savoury caramel notes that stop the apple topping from tasting one-dimensional.
  • Simple, hearty serving: The mash, fruit and sausage can be plated together as a complete dinner without needing extra sides.

Authenticity notes

  • German classic: Himmel und Erde is especially associated with western and northern German home cooking, where potatoes and apples are paired with rich savoury accompaniments.
  • Sausage pairing: Pork sausage suits the dish because its saltiness and fat balance the sweet apple-onion topping and mild mash.

Ingredient notes

  • Choose the right potatoes: Yukon Gold potatoes give a naturally buttery mash; other floury or all-purpose potatoes can also work if cooked until fully tender.
  • Use firm apples: Firm, tart-sweet apples hold their shape better in the pan and keep the topping from becoming too soft or sugary.
  • Sausage choice matters: A good pork sausage or bratwurst gives the dish its savoury backbone, so choose one with enough seasoning to stand up to the sweet apples.

Texture tips

  • For smoother mash: Mash the potatoes while hot and add the warm milk gradually, stopping when the texture is creamy but not loose.
  • Steam-dry the potatoes: Returning the drained potatoes to the hot pot briefly helps remove excess moisture before the butter and milk are added.
  • Keep the apples distinct: Cook the apples only until tender so they soften without collapsing completely into the onions.

Common mistakes

  • Rushing the onions: Medium-low heat is important; higher heat browns the onions quickly without developing the same sweet, caramelised flavour.
  • Check the sausages thoroughly: Cook the sausages until browned outside and piping hot all the way through, especially when serving vulnerable guests.
  • Letting it sit too long: The dish is at its best served straight away, while the mash is hot and the sausage fat is still glossy.

  1. Peel the potatoes and cut into even chunks. Put them in a large pot, cover with cold water, and add 1 tsp of the salt. Bring to the boil, then simmer for 15 to 18 minutes until very tender.
  2. Meanwhile, halve and thinly slice the onions. Melt 30 g of the butter in a large frying pan over medium-low heat, then cook the onions for 15 to 20 minutes, stirring often, until deep golden and sweet. Stir in 1 tsp caster sugar and a pinch of black pepper for the last minute.
  3. Peel, core, and cut the apples into small chunks. Add them to the onions with the remaining 1 tsp caster sugar and cook for 6 to 8 minutes, stirring, until the apples are tender but not completely collapsed. Scrape the apple-onion mixture into a bowl and keep warm.
  4. In the same frying pan, cook the sausages over medium heat for 10 to 12 minutes, turning regularly, until browned and cooked through. If the pan looks dry, add a small knob of the remaining butter to help them colour evenly. Keep the sausages warm off the heat.
  5. Drain the potatoes well, then return them to the hot pot for 1 minute to steam-dry. Warm the milk in a small saucepan or in the microwave until hot but not boiling. Mash the potatoes with the remaining butter and hot milk until creamy, then season with the remaining salt and the black pepper.
  6. Spoon the mash onto plates and top with the tender apples and a generous spoonful of caramelised onions. Serve with the sausages alongside. Eat straight away while everything is piping hot.

Recipe notes

Tips

  • For the smoothest mash, mash the potatoes while they are still hot and add the milk gradually until it is just as creamy as you like.
  • Keep the heat low for the onions and stir often; slow cooking is what gives you proper caramelisation rather than browning.
  • If serving anyone who is pregnant, elderly, or immunocompromised, make sure the sausages are cooked until piping hot all the way through.

Substitutions

  • Replace Apple with Pear for a softer, more floral fruit topping.
  • Replace Whole milk with Double cream for a richer mash.
  • Replace Pork sausage with Bratwurst sausage for a more traditional German-style sausage.

Storage

  • Refrigerate up to 2 days
  • Cool leftovers quickly and refrigerate in an airtight container. Reheat the mash with a splash of whole milk in a saucepan over low heat, stirring until piping hot; reheat sausages in a frying pan over medium heat until hot throughout.
