Frittata di Zucchine e Menta (Courgette and Mint Frittata)
Why this recipe works
- Quick to prepare: Grated courgette cooks quickly, helping the frittata come together in under 30 minutes.
- Simple, layered flavour: Soft onion, Parmigiano Reggiano and fresh mint add savoury depth and brightness without needing many ingredients.
- Flexible serving: The frittata slices cleanly and works well warm or at room temperature, making it useful for lunch, picnics or light suppers.

Texture tips
- Cook off the courgette moisture: Keep cooking the grated courgette until the pan looks fairly dry before mixing it with the eggs; this prevents a watery frittata.
- Watch the grill closely: The frittata only needs a short blast under the grill to set the centre. Remove it as soon as it is puffed and just set.
Timing notes
- Rest before slicing: A short rest helps the eggs finish setting, so the frittata cuts into cleaner wedges.
- Serve warm or at room temperature: This style of frittata does not need to be served immediately; it holds its texture well once cooled slightly.
Ingredient notes
- Choose firm courgettes: Firm courgettes grate neatly and release less excess moisture than softer, older ones.
- Use fresh mint: Fresh mint gives a clean, aromatic finish; dried mint would taste flatter and more concentrated in the eggs.
- Use a hard grating cheese: Parmigiano Reggiano brings savoury depth, while Grana Padano gives a milder, slightly sweeter result.
Make-ahead tips
- Make ahead for later: Cook the frittata in advance, cool it completely, then refrigerate in a sealed container.
- Reheat gently: Warm slices in a nonstick pan over a low heat until piping hot, or serve them at room temperature.

Instructions
- Trim the courgette, then grate it on the coarse side of a grater. Peel and finely slice the onion. Pick the mint leaves and finely shred them.
- Heat 1 tbsp of the olive oil in a nonstick frying pan over a medium heat. Add the onion with a pinch of the salt and cook for 4 to 5 minutes until softened but not coloured. Add the courgette and cook for 6 to 8 minutes, stirring, until tender and any excess moisture has cooked off.
- Meanwhile, crack the eggs into a bowl and whisk with the parmesan, remaining salt and the black pepper. Stir in most of the mint, saving a little to finish. Tip in the warm courgette mixture and stir to combine.
- Wipe out the pan if needed, then add the remaining 1 tbsp olive oil and set over a medium-low heat. Pour in the egg mixture and cook gently for 5 to 6 minutes until the edges are set and the centre is still slightly runny. Run a spatula around the edge to keep it from sticking.
- Preheat the grill to high. Grill the frittata for 2 to 3 minutes until puffed and just set in the centre, watching closely so it does not over-brown. Rest for 2 minutes, then scatter over the reserved mint, slice, and serve warm or at room temperature.
Recipe notes
Tips
- For the best texture, cook the courgette until the pan looks fairly dry before adding it to the eggs, otherwise the frittata can turn watery.
- If you are serving at room temperature, let it stand for 10 minutes before slicing so it sets cleanly.
Substitutions
- Replace Parmesan with Grana Padano cheese for a slightly milder, sweeter finish.
- Replace Fresh mint with Fresh basil for a more classic summer flavour.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container. Reheat slices in a nonstick pan over a low heat until piping hot, or serve at room temperature.
