Nordic Vegan Barley Bowl with Beetroot, Kale and Chickpeas
Why this recipe works
- Good texture contrast: Chewy barley, tender roasted beetroot, softened kale and crisp chickpeas keep the bowl varied and satisfying.
- Sharp, balanced dressing: Wholegrain mustard and apple cider vinegar brighten the earthy beetroot and grains without making the bowl feel heavy.
- Built for meal prep: The barley, beetroot and chickpeas hold well when stored separately from the kale, dill and dressing.

Texture tips
- For crisper chickpeas: Dry the chickpeas thoroughly before roasting and spread them out so they roast rather than steam.
- Keep the barley pleasantly chewy: Drain it as soon as it is tender with a little bite, then let it steam-dry briefly in the warm pan.
- Dress in stages: Stir some dressing through the warm barley, then add the rest just before serving to keep the toppings distinct.
Make-ahead tips
- Store the fresh elements apart: Keep the kale, dill and any remaining dressing separate from the cooked barley, beetroot and chickpeas for the best texture.
- Reheat before assembling: Warm the barley, beetroot and chickpeas in a 180°C (355°F) oven until piping hot, then add the fresh kale, dill and dressing.
- Good for lunch prep: Cooked components can be portioned ahead and assembled when needed, making the bowl practical for packed lunches.
Ingredient notes
- Choose firm beetroot: Firm, unblemished beetroot roasts more evenly and gives the bowl its characteristic earthy sweetness.
- Use fresh dill if possible: Fresh dill gives a brighter, more aromatic finish than dried herbs and suits the mustard-vinegar dressing.
- Rapeseed oil keeps it light: Rapeseed oil has a clean flavour that lets the barley, beetroot and dill remain the focus.

Ingredients
Instructions
- Heat the oven to 220°C (430°F). Peel the beetroot and cut into bite-size chunks.
- Tip the beetroot onto a baking tray and toss with 1 tbsp rapeseed oil, 0.5 tsp fine sea salt and the black pepper. Roast for 25 to 30 minutes, turning once, until tender and lightly caramelised at the edges.
- Meanwhile, cook the pearled barley in a saucepan of well-salted boiling water until tender with a little chew, 25 to 30 minutes. Drain well in a colander and return to the warm pan to steam-dry for 1 minute.
- Drain and rinse the chickpeas, then pat them dry. Toss with 1 tbsp rapeseed oil and 0.5 tsp fine sea salt, spread on the tray beside the beetroot for the final 12 to 15 minutes, and roast until crisp and golden.
- Strip the kale leaves from any tough stems and tear into bite-size pieces. In a mixing bowl, massage the kale with 1 tbsp rapeseed oil and a pinch of the remaining salt until slightly softened and glossy.
- Whisk the whole-grain mustard with the apple cider vinegar and 2 tbsp water, then season with the remaining fine sea salt to taste. Stir half the dressing through the warm barley so it soaks in.
- Divide the dressed barley between two bowls and top with the roasted beetroot, kale and crispy chickpeas. Finely chop the fresh dill and scatter over the top, then drizzle with the remaining dressing to serve.
Recipe notes
Tips
- For the crispest chickpeas, dry them thoroughly before roasting and spread them in a single layer so they roast rather than steam.
- If you are pregnant, elderly, or immunocompromised, ensure the chickpeas are roasted until piping hot throughout before serving.
Substitutions
- Replace rapeseed oil with olive oil for a fruitier dressing and roast.
- Replace whole-grain mustard with dijon-mustard for a smoother, sharper dressing.
Storage
- Refrigerate up to 3 days
- Store components separately if possible: barley, beetroot and chickpeas in one container and kale and dill in another. Reheat barley, beetroot and chickpeas in a 180°C (355°F) oven for 8 to 10 minutes until piping hot, then add the kale, dill and dressing just before serving.
