Fusion Tofu Rice Bowl
Why this recipe works
- Good texture contrast: Soft jasmine rice, crisp vegetables and golden tofu keep the bowl varied and satisfying.
- Bright, savoury balance: Rice vinegar cuts through the sesame oil and soy sauce, giving the dressing freshness as well as depth.
- Fast weeknight method: The rice cooks while the tofu sears and the vegetables are dressed, so the components come together efficiently.
- Easy to adjust: The chilli, vinegar and soy sauce can be tuned at the end to make the bowl milder, sharper or more savoury.

Adjust the heat
- For less heat: Use fewer chilli flakes in the dressing and add extra at the table only if needed.
- For more heat: Increase the chilli flakes or finish with a little chilli oil for a warmer, more aromatic bowl.
- Keep it balanced: If the chilli feels too sharp, add a little more rice vinegar or sesame oil to soften the heat.
Texture tips
- Improve the tofu sear: Pat the tofu very dry before frying and let it sit in the pan briefly before turning so it can colour properly.
- Keep the salad crisp: Add the dressed cucumber and carrot just before serving, especially if the components have been stored ahead.
Make-ahead tips
- Store components separately: Keep the rice, tofu and salad in separate airtight containers so the vegetables stay crisp.
- Reheat before assembling: Warm the rice and tofu until piping hot, then add the cold salad and dressing at the end.
- Useful for meal prep: Cook the rice and tofu ahead, then slice the spring onion and dress the vegetables close to serving.
Ingredient notes
- Choose firm tofu: Firm tofu is the best fit here because it holds its shape in the pan and develops a better golden surface.
- Adjust the sharpness: Rice vinegar gives a clean, mild tang; white wine vinegar will taste sharper and slightly fruitier.
- Check the soy sauce: Different soy sauces vary in saltiness, so taste the dressing before spooning over the finished bowls.

Instructions
- Rinse the jasmine rice until the water runs mostly clear, then cook it in a saucepan according to packet instructions. Once tender, cover and rest off the heat for 5 minutes. Keep warm while you prepare the toppings.
- Meanwhile, pat the tofu dry and cut into bite-sized cubes. Heat 1 tbsp of the sesame oil in a large frying pan over medium-high heat, then sear the tofu for 8 to 10 minutes, turning, until golden on most sides. Reduce the heat to medium and splash in 1 tbsp of the soy sauce to glaze for 30 seconds.
- Halve the cucumber lengthways, scoop out the watery seeds if you like, then thinly slice. Grate the carrot on the coarse side of a grater. Trim and finely slice the spring onion.
- In a mixing bowl, whisk the remaining 3 tbsp soy sauce with the rice vinegar, remaining 1 tbsp sesame oil, and the chilli flakes. Toss in the cucumber and carrot, then let it sit for 2 minutes to lightly pickle and soften.
- Divide the rice between two bowls and top with the seared tofu and cucumber and carrot salad. Spoon over any dressing left in the bowl. Finish with the spring onion and serve straight away.
Recipe notes
Tips
- For the best sear, dry the tofu well and avoid moving it for the first couple of minutes so it can colour.
- If you prefer a milder bowl, start with half the chilli flakes and add more at the table.
Substitutions
- Replace rice vinegar with white wine vinegar for a sharper, fruitier tang.
- Replace soy sauce with light soy sauce for a slightly lighter, less intense seasoning.
Storage
- Refrigerate up to 2 days
- Store rice, tofu and salad separately in airtight containers. Reheat the rice and tofu in the microwave until piping hot, and add the salad cold at the end so it stays crisp.
