Pink Potato Salad with Beetroot, Yoghurt and Dill
Why this recipe works
- Bright, balanced dressing: Greek yoghurt, Dijon mustard and apple cider vinegar give the salad tang without making it heavy.
- Creamy without excess richness: Blended beetroot thickens and colours the dressing while the yoghurt keeps it lighter than a mayonnaise-based potato salad.
- Warm potatoes absorb more flavour: Tossing the potatoes while still warm helps the dressing soak in rather than sit on the surface.
- Easy to serve ahead: The salad can be served chilled or at cool room temperature, making it practical for packed lunches, buffets and picnics.

Timing notes
- Brief chilling helps the salad settle: A short chill gives the beetroot dressing time to colour the potatoes evenly and allows the flavours to mellow.
- Best served cool: Serve straight from the fridge or let it stand briefly until cool rather than icy cold, which helps the dressing taste brighter.
Ingredient notes
- Use waxy potatoes: New or baby potatoes hold their shape after boiling, giving the salad a clean, firm bite instead of turning crumbly.
- Adjust the sharpness: Taste the dressing before folding in the radishes and dill; add a little more vinegar if you prefer a brighter finish.
- Keep the radishes crisp: Slice the radishes close to serving time and fold them in at the end so they stay crunchy and fresh.
Make-ahead tips
- Hold back the fresh additions: If making the salad in advance, keep the radishes and dill separate and stir them through just before serving.
- Store chilled: Keep the dressed potato salad in an airtight container in the fridge and use within two days.

Instructions
- Put the potatoes in a large pot, cover with cold water and add 1 tsp of the salt. Bring to the boil, then simmer for 12 to 18 minutes until a knife slides in easily. Drain well in a colander and let the steam escape for 2 minutes.
- While the potatoes cook, blend the beetroot to a smooth purée in a mixing bowl, then whisk in the yogurt, Dijon mustard, apple cider vinegar, rapeseed oil, black pepper and the remaining 1 tsp salt. Taste and adjust with a little more vinegar if you want it sharper. The dressing should be loose enough to coat the potatoes.
- As soon as the potatoes are cool enough to handle, halve or quarter them so they are bite-sized, then add them to the bowl while still warm. Toss thoroughly so the warm potatoes soak up the dressing. Leave for 10 minutes, tossing once halfway through.
- Cover and chill for 15 minutes to let the colour set and the flavours settle. Meanwhile, thinly slice the radishes and roughly chop the dill. Keep them separate so they stay crisp and bright.
- Fold the radishes and dill through the salad just before serving. Check the seasoning and add a final pinch of black pepper if you like. Serve chilled or at cool room temperature.
Recipe notes
Tips
- For the best texture, dress the potatoes while they are still warm so they absorb the tangy dressing rather than just being coated.
- If you are serving later, keep the radishes and dill separate and fold them through at the last moment to preserve crunch and freshness.
Substitutions
- Replace Greek yogurt with crème fraîche for a richer, less tangy dressing.
- Replace apple cider vinegar with white wine vinegar for a cleaner, sharper acidity.
- Replace fresh dill with fresh chives for a milder, oniony finish.
Storage
- Refrigerate up to 2 days
- Store in an airtight container in the fridge. For the best crunch, add the radish and fresh dill just before serving; if already mixed in, expect the radish to soften slightly.
