Sopa de Lima (Yucatán Chicken and Lime Soup)

Sopa de lima is one of the defining soups of Yucatán cooking: a light but deeply savoury chicken broth sharpened with fragrant lime and finished with crisp tortilla strips. The soup is typically served hot, with shredded chicken in a tomato, onion and garlic broth, then brightened at the end so the citrus stays fresh rather than cooked out. In this version, bone-in chicken thighs give the stock body, oregano adds a gentle herbal note, and fresh coriander brings a clean finish. The result is tangy, comforting and refreshing, with the crunch of fried tortilla strips making each bowl feel complete.

Why this recipe works

  • A deeper broth base: Cooking the onion, tomato and garlic until jammy gives the soup a savoury foundation before the chicken and stock are added.
  • Bright lime finish: Adding the lime juice off the heat preserves its clean citrus aroma and lets you adjust the sharpness just before serving.
  • Crisp contrast: Freshly fried tortilla strips bring crunch to the light broth and shredded chicken, making each bowl more complete.

Authenticity notes

  • Yucatán-style soup: Sopa de Lima is closely associated with Yucatán cooking, where a clear chicken broth, citrus fragrance and crisp tortilla garnish are central to the dish.
  • Simple home-style structure: The recipe keeps the base practical: softened aromatics, tomato, oregano, chicken stock and shredded chicken, finished with lime rather than heavy seasoning.

Ingredient notes

  • Adjust the lime at the end: Limes vary in sharpness, so add most of the juice first, taste, then increase it gradually for a brighter broth.
  • Use bone-in chicken for depth: Bone-in thighs enrich the broth as they simmer and stay tender enough to shred easily.
  • Day-old tortillas fry well: Slightly drier corn tortillas crisp more readily and are less likely to turn leathery in the oil.

Common mistakes

  • Boiling the broth too hard: Keep the soup at a gentle simmer rather than a rolling boil; this helps the broth stay cleaner and the chicken cook evenly.
  • Adding tortillas too early: Keep the tortilla strips separate until serving so they stay crisp against the hot broth.

Make-ahead tips

  • Make the soup in advance: The broth and shredded chicken can be prepared ahead and refrigerated; add the lime, coriander and tortilla strips when reheating and serving.
  • Freeze without garnishes: Freeze the soup without coriander or tortilla strips, then reheat until piping hot and finish with fresh lime and crisp toppings.

  1. Heat the vegetable oil in a frying pan over medium-high heat. Cut the corn tortillas into thin strips and fry in batches for 2 to 4 minutes, turning, until crisp and golden. Lift out with tongs and set aside.
  2. Carefully pour off all but 2 tbsp of the oil from the pan into a heatproof bowl, leaving the rest in the pan. Finely chop the white onion, chop the tomatoes, and crush the garlic. Keep the tortilla strips aside for serving.
  3. Set the pan over medium heat and cook the onion for 5 minutes until softened. Add the tomatoes and garlic and cook for 6 to 8 minutes until the tomatoes break down and the mixture looks jammy. Stir in the dried oregano.
  4. Scrape the tomato base into a large pot and add the chicken thighs and chicken stock. Bring to a gentle simmer, then cook for 20 to 25 minutes until the chicken is cooked through and tender. Skim any foam from the surface as needed.
  5. Lift out the chicken and leave until cool enough to handle, then pull the meat from the bones and discard the skin and bones. Return the shredded chicken to the pot and bring back to a gentle simmer. Taste and adjust with more lime later if you like it sharper.
  6. Finely chop the fresh coriander. Juice the limes, then take the pot off the heat and stir in most of the lime juice, adding more to taste. Ladle into bowls and top with coriander and the crispy tortilla strips.

Recipe notes

Tips

  • For the cleanest lime flavour, add the lime juice off the heat so it stays bright and fragrant.
  • If you prefer a clearer broth, simmer gently rather than boiling, and skim the surface during cooking.
  • If serving to anyone who is pregnant, elderly, or immunocompromised, ensure the chicken is cooked until piping hot throughout.

Substitutions

  • Replace Chicken thighs with Chicken breast boneless skinless; simmer gently for 12 to 15 minutes, then shred.
  • Replace Dried oregano with Fresh oregano for a softer herbal note; add it at the end with the Fresh coriander.
  • Replace Vegetable oil with Canola oil for frying the Corn tortillas.

Storage

  • Refrigerate up to 3 days
  • Cool the soup quickly, then refrigerate in a sealed container for up to 3 days. Freeze the soup (without tortilla strips and coriander) for up to 2 months; defrost overnight in the fridge and reheat in a saucepan until piping hot, then finish with fresh lime juice, coriander, and freshly fried tortilla strips.
