Zupa Szczawiowa (Polish Sorrel Soup)
Why this recipe works
- Balanced tang: Sorrel brings a naturally sharp, lemony flavour, while potato, stock and sour cream round it into a smoother, more comforting soup.
- Weeknight-friendly: The soup comes together in under an hour, with only a short simmer needed once the potatoes are tender.
- Simple but satisfying: Hard-boiled eggs turn the light, herb-led broth into a more substantial bowl without making it heavy.

Ingredient notes
- Choosing sorrel: Fresh sorrel should look bright and perky, with a clean sharp aroma. Larger leaves can taste more intense, so add gradually if the bunch seems especially tart.
- Managing sharpness: If the soup tastes too sour, stir in a little extra sour cream off the heat or let the potatoes and stock soften the flavour before adjusting the seasoning.
Texture tips
- Keep the cream smooth: Take the pot off the heat before stirring in the sour cream, and let the bubbling settle first. This helps prevent splitting and keeps the finish creamy.
- Cut potatoes evenly: Small, even potato cubes cook at the same pace and give the soup a neat, tender texture without some pieces breaking down too far.
Make-ahead tips
- Store eggs separately: Refrigerate the soup and hard-boiled eggs separately where possible, then add the eggs to each bowl when serving.
- Reheat gently: Warm the soup slowly over low heat, stirring often, and avoid boiling once the sour cream has been added.
Authenticity notes
- Polish home-style serving: Zupa szczawiowa is commonly served with hard-boiled eggs, which complement the sour greens and make the soup more filling.

Instructions
- Put the eggs in a saucepan, cover with cold water, and bring to the boil. Simmer for 10 minutes, then drain and cool under cold running water. Peel and halve the eggs.
- Meanwhile, melt the butter in a large pot over medium heat. Finely chop the onion and cook for 6 to 8 minutes until soft and translucent, without browning.
- Peel the potatoes and cut into small, even cubes. Add the potatoes to the pot, pour in the chicken stock, and bring to a gentle simmer. Cook for 12 to 15 minutes until the potatoes are tender.
- Roughly chop the sorrel and stir it into the soup. Simmer for 2 to 3 minutes until wilted and the soup turns a deeper green. Season with the salt and pepper.
- Take the pot off the heat and let the bubbling subside for 1 minute. Stir in the sour cream until smooth, then taste and adjust seasoning. Finely chop the dill and stir most of it through, reserving a little for serving.
- Ladle the soup into bowls and top each portion with egg halves. Sprinkle with the reserved dill and a little extra black pepper if you like. Serve hot.

Tips
- Add the sour cream off the heat so it stays smooth and does not split.
- If the sorrel is very sharp, start with half, simmer, then add more to taste.
- Food safety: if serving to pregnant people, young children, older adults, or anyone immunocompromised, use eggs that are fully hard-boiled and served piping hot.
Substitutions
- Replace sour cream with crème fraîche for a slightly richer, more stable finish.
- Replace unsalted butter with ghee for a nuttier flavour.
Storage
- Refrigerate up to 3 days
- Cool quickly, then refrigerate. Reheat gently in a saucepan over low heat until piping hot, stirring often; avoid boiling once the sour cream is in. Store the eggs separately if possible and add when serving.
