Kimchi Bokkeum (Korean Stir-Fried Kimchi)

Kimchi bokkeum is a Korean banchan made by frying fermented kimchi until its sharp tang mellows and the edges begin to catch in the pan. Cooking concentrates the cabbage’s chilli, garlic and fermented depth, while onion, a touch of sugar and gochujang give the dish a glossy, savoury-sweet heat. Finished off the heat with sesame oil and roasted sesame seeds, it is warm, punchy and aromatic rather than saucy. Serve it alongside rice, grilled meat, tofu or simple egg dishes, or use it to add quick intensity to a larger Korean-style meal.

Why this recipe works

  • Fast cooking: The kimchi is already seasoned and fermented, so the dish develops deep flavour in only a few minutes of stir-frying.
  • Balanced tang: A little sugar softens the sharpness of mature kimchi without taking away its bright, fermented flavour.
  • Big savoury flavour: Gochujang, onion and sesame oil build a glossy, spicy-savoury coating that makes the kimchi taste richer and more rounded.

Ingredient notes

  • Use mature kimchi: Well-fermented kimchi gives the best tangy, savoury result. Very fresh kimchi will taste gentler and less complex once cooked.
  • Gochujang varies: Some gochujang is sweeter or hotter than others, so adjust the final seasoning to suit the brand you use.

Adjust the heat

  • For less heat: Use a milder kimchi and reduce the gochujang slightly, keeping enough to give the dish its glossy, savoury finish.
  • For more heat: Choose a spicier kimchi or add extra gochujang gradually, tasting as you go so the chilli does not overpower the fermented tang.

Common mistakes

  • Cooking too gently: Keep the pan hot enough for the kimchi to fry and lightly caramelise rather than release liquid and stew.
  • Letting the sauce catch: Once the sugar and gochujang go in, stir often and cook briefly; the mixture can darken quickly if left sitting on the heat.

Make-ahead tips

  • Good for advance cooking: Kimchi bokkeum keeps well in the fridge and can be made ahead for quick meals, lunch boxes or banchan-style serving.
  • Reheat in a pan: Warm it in a frying pan over medium heat until piping hot, adding a small splash of water only if it looks dry.

  1. Halve and thinly slice the onion. If the kimchi is in large pieces, roughly cut it into bite-sized lengths.
  2. Heat the vegetable oil in a wok or large frying pan over medium-high heat. Add the onion and stir-fry for 2 to 3 minutes until softened and just starting to colour.
  3. Add the kimchi and stir-fry for 3 to 4 minutes until it smells fragrant and the edges start to caramelise slightly. Sprinkle over the caster sugar and cook for 30 seconds, stirring to dissolve.
  4. Stir in the gochujang and cook for 1 to 2 minutes until the kimchi is evenly coated and the mixture looks glossy. Take off the heat, drizzle over the sesame oil, and toss to finish.
  5. Transfer to a serving dish and scatter over the roasted sesame seeds. Serve warm.

Recipe notes

Tips

  • Use well-fermented kimchi for the best tangy, savoury flavour; very fresh kimchi will taste milder once cooked.
  • Keep the heat at medium-high so the kimchi fries rather than stews, and stir often to prevent sticking.
  • If serving to vulnerable groups, use kimchi made with pasteurised ingredients and ensure it is cooked until piping hot throughout.

Substitutions

  • Replace Yellow onion with Sweet onion for a gentler sweetness.
  • Replace Caster sugar with Palm sugar for a deeper, caramel-like sweetness.
  • Replace Vegetable oil with Canola oil for a similarly neutral frying oil.

Storage

  • Refrigerate up to 3 days
  • Cool, then refrigerate in a sealed container for up to 3 days. Reheat in a frying pan over medium heat for 2 to 3 minutes until piping hot, adding a small splash of water only if it looks dry.
