Turkish Roasted Vegetables with Sumac, Lemon and Parsley
Why this recipe works
- Layered savoury flavour: Roasting concentrates the sweetness of the vegetables, while garlic, olive oil and black pepper give the dish a simple savoury base.
- Bright finish: Sumac adds a dry, lemony sharpness, with fresh lemon juice added after roasting to keep the flavour vivid.
- Flexible serving: The vegetables work warm, at room temperature, or reheated, making them easy to serve as a side dish or part of a larger spread.

Ingredient notes
- About sumac: Sumac is a deep red spice with a tart, citrus-like flavour. Adding it after roasting preserves its brightness rather than dulling it in the oven.
- Choose firm vegetables: Firm aubergine and courgette hold their shape better during roasting and give a more satisfying texture.
- Adjust the lemon at the end: Taste after adding the sumac, then add lemon gradually so the vegetables are tangy without becoming sharp.
Common mistakes
- Avoid overcrowding: Spread the vegetables in a single layer with space between pieces; if they are packed too tightly, they will steam rather than brown.
- Watch the garlic: If the garlic starts to catch before the vegetables are tender, turn the vegetables and move the tray lower in the oven for the final stage.
Make-ahead tips
- Roast ahead: The vegetables can be roasted in advance and kept chilled, then served at room temperature or reheated before finishing.
- Reheat for best texture: Reheat on a baking tray at 200°C (390°F) until piping hot, rather than microwaving, to help restore some of the roasted edges.
- Keep the finish fresh: For the brightest flavour, add the lemon juice and parsley after reheating rather than before storing.
Serving ideas
- Serve with grains or bread: Pair with bulgur, rice, couscous or warm flatbreads for a simple meal.
- Add a creamy sauce: A spoonful of tahini sauce or garlicky yoghurt works well with the tangy sumac and sweet roasted vegetables.
- Finish just before serving: Scatter over fresh parsley at the last moment so it stays green and aromatic.

Ingredients
Instructions
- Heat the oven to 220°C (430°F). Cut the aubergine and courgette into 2.5 cm chunks, cut the red peppers into 3 cm pieces, and cut the red onion into thick wedges. Crush the garlic to a paste.
- Tip the vegetables into a large bowl and add the garlic, olive oil, fine sea salt and black pepper. Toss well so everything is evenly coated, then spread out on a large baking tray in a single layer. Roast for 30 minutes, turning once halfway, until deeply browned and tender.
- Return the vegetables to the bowl (or use the tray) and sprinkle over the sumac. Squeeze over the lemon juice, then toss gently and taste for seasoning. Roughly chop the fresh parsley and scatter over just before serving.
Recipe notes
Tips
- For the best caramelisation, keep the vegetables in a single layer with a little space between pieces; use two trays if needed.
- If the garlic looks like it is catching, turn the vegetables and move the tray to a lower shelf for the final 10 minutes.
Substitutions
- Replace Fresh parsley with Fresh mint for a brighter, more aromatic finish.
- Replace Lemon with Lime for a sharper citrus note.
Storage
- Refrigerate up to 4 days
- Cool completely, then refrigerate in a sealed container. Reheat on a baking tray at 200°C (390°F) for 10 to 12 minutes until piping hot, or enjoy at room temperature; add the lemon and fresh parsley after reheating for the freshest flavour.
