Saumon en Croûte (Salmon Wellington with Spinach)
Why this recipe works
- Crisp pastry, tender fish: The puff pastry bakes into a golden shell while the salmon stays protected and moist inside.
- Richness with lift: Crème fraîche adds creaminess, while Dijon mustard and lemon bring enough sharpness to balance the buttery pastry.
- Simple but layered filling: Spinach, dill and black pepper give the filling freshness and savoury depth without overwhelming the salmon.

Ingredient notes
- Choose good puff pastry: All-butter puff pastry gives the best flavour and a crisp, flaky finish around the salmon.
- Drain the spinach well: Press out as much liquid as possible after wilting; excess moisture can soften the pastry from the inside.
- Use lemon at the table: A squeeze of lemon just before eating brightens the fish and keeps the finished dish from tasting too rich.
Timing notes
- Rest before slicing: Let the salmon en croûte stand for 5 to 10 minutes so the filling settles and the slices hold their shape.
- Best served hot or warm: Serve soon after baking, while the pastry is still crisp and the centre is moist.
Make-ahead tips
- Prepare the filling ahead: The spinach mixture can be cooked, squeezed dry and chilled in advance; assemble the parcel close to baking for the best pastry texture.
- Reheat in the oven: Reheat leftovers on a baking tray at 180°C (355°F) until piping hot, which helps the pastry crisp again.
Common mistakes
- Leaving the filling too wet: Watery spinach or too much filling can make the pastry soft, so keep the layer even and well drained.
- Baking longer than needed: Once the pastry is deep golden and crisp, avoid extending the bake unnecessarily; the salmon will continue to firm slightly as it rests.
- Letting the pastry darken too fast: If the top browns before the centre is ready, cover it loosely with foil for the final part of baking.

Instructions
- Heat the oven to 200°C (390°F) and line a baking tray with parchment paper. Put the spinach in a frying pan over medium heat with a pinch of the salt and cook just until wilted. Tip into a bowl and press firmly to remove as much liquid as possible.
- Finely chop the dill. Stir the dill into the spinach with the crème fraiche, Dijon mustard, remaining salt and the black pepper. Taste and adjust seasoning if needed.
- Pat the salmon dry and season lightly with a little of the mixture from the bowl if you like, keeping most for the filling. Roll out the puff pastry on a lightly floured surface into a rectangle large enough to wrap the salmon with a small overlap. Transfer the pastry to the lined tray.
- Spread the spinach mixture down the centre of the pastry, leaving a 3 cm border. Sit the salmon on top, then bring the pastry up and over to enclose it, sealing the seam and tucking in the ends. Turn seam-side down and neaten the shape.
- Beat the egg and brush it all over the pastry. Score the top lightly with the tip of a knife for decoration, taking care not to cut through. Bake for 25 to 30 minutes until deep golden and the pastry feels crisp.
- Rest for 5 minutes before slicing so the filling settles. Cut the lemon into wedges and serve alongside for squeezing over each portion. Serve hot or warm.
Recipe notes
Tips
- For the neatest slices, let the Wellington rest for 10 minutes, then use a serrated knife and a gentle sawing motion.
- If the pastry is browning too quickly, loosely cover the top with foil for the final 10 minutes of baking.
- Food safety: if serving to pregnant people, young children, older adults, or anyone immunocompromised, ensure the salmon is cooked through and piping hot in the centre.
Substitutions
- Replace Fresh dill with Fresh parsley for a milder, more classic herb note.
- Replace Crème fraiche with Greek yogurt for a lighter filling, but keep the oven time the same and avoid overfilling to prevent splitting.
- Replace Dijon mustard with whole-grain mustard for a gentler heat and a little texture.
Storage
- Refrigerate up to 2 days
- Cool completely, then refrigerate in an airtight container. Reheat on a baking tray in a 180°C (355°F) oven for 12 to 15 minutes until piping hot and the pastry re-crisps; avoid microwaving as it softens the pastry.
