Lussekatter (Swedish Saffron Buns with Cardamom and Raisins)

Golden, gently sweet and unmistakably scented with saffron, lussekatter are Swedish enriched yeast buns closely associated with Advent and St Lucia celebrations. The dough is soft and buttery rather than cake-like, with cardamom adding warmth beneath the floral saffron and a pair of raisins giving each curled bun its familiar finish. Their traditional S shape makes them instantly recognisable, but the appeal is just as much in the texture: light, tender bread with a delicate chew and a rich yellow crumb. Serve them slightly warm or at room temperature with coffee, tea or a glass of milk, as part of a festive spread or a simple winter bake.

Why this recipe works

  • Saffron-infused milk: Infusing the saffron in warm milk draws out its colour and aroma before it is worked through the dough.
  • Not overly sweet: A lightly sweet enriched dough lets the saffron, cardamom and buttery crumb stay at the centre of the bun.
  • Soft, enriched crumb: Milk, butter and egg give the buns a tender texture that works well warm from the oven or refreshed later.

Ingredient notes

  • Use saffron threads, not powder: Threads give cleaner flavour and colour; crushing them lightly before infusing helps them release more evenly into the milk.
  • Check the yeast: Instant yeast should be fresh and active, as this dough is enriched and needs reliable lift during proving.
  • Press in the raisins firmly: Nestling the raisins into the curled centres helps them stay in place as the buns expand in the oven.

Timing notes

  • Let the dough guide the timing: Proving times vary with kitchen temperature; look for dough that has doubled and feels airy rather than relying only on the clock.
  • Cool before serving: A short cooling time allows the enriched crumb to set, so the buns slice and pull apart cleanly.
  • Best freshly baked: Lussekatter are softest on the day they are baked, but they refresh well in a 180°C (355°F) oven.

Texture tips

  • Knead until elastic: A smooth, slightly tacky dough with good elasticity gives the buns structure without making them heavy.
  • Avoid adding too much flour: The dough should not be dry; adding excess flour during shaping can make the baked buns firmer.
  • Bake just until golden: Remove the buns once they are golden and set, as enriched dough can dry out if left in the oven too long.

Make-ahead tips

  • Freeze after baking: Cool the buns fully, wrap well and freeze; defrost at room temperature before refreshing.
  • Refresh gently: Warm thawed or day-old buns in a 180°C (355°F) oven until soft and fragrant again.
  • Pack once cool: For taking to gatherings, let the buns cool completely first so condensation does not soften the crust.

  1. Warm the milk in a small saucepan until just lukewarm, then take off the heat and stir in the saffron. Leave to infuse for 10 minutes so the milk turns a deep yellow.
  2. Add the butter to the warm saffron milk and stir until melted. Let it cool slightly so it is warm, not hot.
  3. In a stand mixer bowl, mix the flour, sugar, yeast, cardamom and salt. Add the saffron milk mixture and the egg, then mix to a shaggy dough.
  4. Knead on medium speed for 8 to 10 minutes until smooth, elastic and only slightly tacky. If needed, stop once or twice to scrape down the bowl.
  5. Cover the bowl and leave the dough to rise in a warm place until doubled in size. It should feel airy and spring back slowly when pressed.
  6. Tip the dough onto a clean work surface and divide into 12 equal pieces. Roll each piece into a rope about 30 cm long, then curl the ends in opposite directions to form an S shape.
  7. Line a baking tray with parchment paper and arrange the buns with space between them. Press 2 raisins into the centres of each bun, then cover lightly and prove until puffy.
  8. Heat the oven to 200°C (390°F). Bake the buns for 10 to 12 minutes until golden, rotating the tray halfway through if your oven bakes unevenly.
  9. Cool on a rack for at least 15 minutes before serving so the crumb sets. Serve warm or at room temperature.

Recipe notes

Tips

  • For the best colour and flavour, crush the saffron threads between your fingers before adding them to the warm milk.
  • If your kitchen is cool, prove the dough in an unheated oven with the light on to keep it gently warm.
  • If serving to young children, check the buns for any loose raisins before eating.

Substitutions

  • Replace whole milk with lactose-free milk for a lactose-free version with a similar richness.
  • Replace caster sugar with light brown sugar for a slightly deeper, caramel-like sweetness.
  • Replace raisins with dried cranberries for a tangier finish.

Storage

  • Refrigerate up to 2 days
  • Store in an airtight container. Refresh in a 180°C (355°F) oven for 5 to 7 minutes. Freeze well wrapped for up to 2 months and defrost at room temperature before reheating.
